When was the last time you had a fresh, homemade muffin for breakfast? If you haven’t had them in a while, you MUST make them. For example, now. And when you’re done, you can whip up some of these easy gluten-free dark chocolate muffins and a bowl of double chocolate banana muffins.

The thing is, I’m not a morning person. For example, at all. Even during my university years, I wouldn’t be thinking at 8am because it was too early! And even when I had no choice, I sat in that class – to scratch my head – I slept through that class, and I was still walking around in a daze until 11 in the morning.
But now that I’m a certified card-carrying adult, I wake up pretty early every day: 5:58 EARLY.
5:58 am. Because for some reason that extra 2 minutes until 5am feels like you’re waking up at 5am instead of 6am. And that sure counts as an extra hour in the day, right?

Anyway, needless to say, in college he would snap at me and say, “Um, didn’t you sleep last night?” “Of course you’re going to bed now!!!” And “Why don’t you have fun anymore or do something mildly fun?” Boring adult!!”
Anyone, ONE thing that makes everything better? Homemade delicacies for breakfast. As I said, there is at least one obvious advantage to this old business called a food blog, and it’s called:

Now I wake up/have to get up early (who am I kidding) to make delicious treats like Homemade Chunky Paleo Curly Granola and these Moist Chocolate Banana Muffins . It’s better for them than waking up at 10am, walking into class still very foggy, and then staying up until 3am to cram and have some last-minute fun (for good measure).

They’re better than store-bought, totally guilt-inducing, heavy and overly sweet muffins that drag you down all day. They are better than anything you can buy on the way to work.
They’re moist (if you’re not already), perfectly balanced between deliciously fluffy and satisfyingly dense with melted chocolate chips and just the right hint of nuttiness. They’re almost ready to rock your morning sock set!

– *Oat flour instead of almond flour: use a TOTAL of 1 ¾ cup + 2 tablespoons of gluten-free oat flour. The muffin will be a little drier and not as fluffy, but still good!
**I like to use this ice cream scoop to scoop out and scoop a ball of batter into each muffin tin. This scoop helps control the dough, prevents messes and gives a nice rounded top. Tip: After dropping the dumplings, tap the pan lightly to help even out the batter.

– Freezing Instructions: These muffins freeze well. It can be stored for up to 1-2 months in an airtight container suitable for freezing. Allow to thaw at room temperature for 15 minutes before consuming. Or microwave in 15 second increments until heated through.

If you don’t already know, I’m obsessed with bananas. Probably because there really is nothing like a warm, delicious banana cake. One of my favorite fried treats to eat at home because they make a delicious breakfast, snack, or quick dessert. These gluten-free banana muffins are packed with nutrients, so I don’t mind feeding the kids chocolate chips in the morning. 😉 If you don’t like chocolate chips, replace them with your favorite nuts.
Healthy Blender Banana Muffins (dairy Free, Flourless)
And for those with food allergies, my recipe for egg-free bananas (which are fantastic by the way) is a dairy-free and egg-free alternative.
Step 1: In a mixing bowl, combine the dry ingredients: flour, oats, baking powder, baking soda, brown sugar, and salt.
Step 2: In a separate large bowl, combine the wet ingredients: mashed bananas, brown sugar, vanilla, eggs, coconut oil, and Greek yogurt
Step 3: Carefully add the dry ingredients to the wet ingredients, being careful not to over mix. Then gently stir in the chocolate chips until combined.

Step 4. Spray the muffin tin with cooking spray. Fill 12 muffin cups with batter. Bake in a preheated 350F oven for 20-25 minutes until a toothpick comes out clean. Cool on a wire rack before serving.
Storage: The best way to store banana muffins is to line the bottom of an airtight container with paper towels, then place each muffin on the bottom. Seal and store on the counter for 4-5 days. Refrigerating muffins potentially dries them out and changes their taste and texture.
Freezing: To freeze gluten-free banana chocolate chip cookies, wrap them individually in plastic wrap and place in a freezer bag or airtight container for up to 3 months. Let them thaw on the counter at room temperature.
It depends on your definition of health. They can be healthy additions to a well-planned diet, especially when made from scratch.
Banana Oatmeal Chocolate Chip Muffin (nut Free & Gluten Free)
The best way to do this is to make sure the cold ingredients are at room temperature. This will help trap air in the dough, making it fluffy.
I don’t recommend it because they don’t break down properly and won’t be sweet. If you want bananas to ripen faster, put them in a brown paper bag with citrus fruits or apples and leave them closed for a few days.
