First, a quick disclaimer. I am guilty of saying that some of my recipes are great. I realize this is very subjective. But I assure you, I do not take these words lightly.

I have been eating this banana bread recipe since 2013! Yes, I have tried other recipes too, but I always come back to this one. I make this quick bread recipe almost weekly and I wouldn’t lie if I said it never lasts more than 3 days!

However, over the years, I discovered that frozen ripe bananas make good banana bread!
Because bananas are very soft and runny when melted. And all those juices are gold! Do not drain the liquid, it will make the bread soggy and tasteless.
If you get good and ripe bananas with lots of black spots, put them in the freezer. (Yes, black bananas are great to use!)
Use a very large bowl to prepare the batter. I use a 4qt bowl (the largest bowl in this set).
Banana Substitutions For Smoothies And Vegan Baking
Insert a long wooden skewer or toothpick to test for doneness. If it comes out clean, the bread is done!
If you want to make a half batch (just 1 loaf or 12 muffins), follow my banana muffin recipe instead. Same recipe, but for half the batch.
However, I always put it in the fridge. Mainly to keep them out of sight or they will be gone in a few hours.
To keep banana bread moist, cover it with plastic wrap or store it in an airtight container.
How To Freeze Bananas (2 Ways)
To serve, I microwave a slice for 30 seconds and it’s fresh out of the oven!

Fueled by our love for this healthy banana bread (and its nutritious sister, chocolate chip banana bread), we’re firmly in the banana-saving camp here, as it’s a must-have in this strawberry banana smoothie.
My love for baking with bananas runs deep, and I have the bananas in the freezer to prove it.
The pros of this method are that it takes me about 2.5 seconds to put them in the freezer, and once they’re in there, I don’t have to do anything with them unless I want to bake them.
If I want to bake this Blueberry Banana Bread or these Banana Chocolate Chip Baked Oatmeal Cups, I take as many bananas as I want and melt them.
Easy Banana Bread (super Moist)
And when I want to freeze bananas for a smoothie, it’s even easier because I don’t (how?) use bananas for smoothies.
I put a piece of paper on a baking sheet, take my spotted banana, peel it and cut it into slices or dice.
Spread them out so they are as single layer as possible (it’s okay if they touch a little).
That way, they won’t freeze together and you can only take out the freezer as many banana slices as you need.
How To Freeze Bananas (the Easy Way)
Place them in the freezer for an hour or two, then place them in a freezer bag and freeze for up to 6 months.
When you need something for this Chocolate Peanut Butter Smoothie or this Metabolism Boost Smoothie, you’ve got it!
Even if you can’t take whole banana peels for baking, freezer bag slices for smoothies, you can meet in the middle.

How To Make Banana Bread With Frozen Bananas
The downside to this method is that your blender may have more trouble blending whole frozen bananas into chunks.
I try to rotate my bananas regularly (not hard for a banana bread lover like me!), and buy a few extra to add to my stash when they’re low.

Bananas are frozen when they ripen and start to develop brown spots on the skin. Banana is very sweet then. If you plan to use your bananas in smoothies or breads, freezing them whole is a great way to do it.
You can freeze bananas, but peeling bananas before freezing will save you time and frustration.
Banana Bread Using Frozen Bananas
Banana peels darken and soften when frozen. Although bananas are safe to eat when ripe, peeling them is very difficult.
Keeping the skin intact will also reduce the quality of your banana. They are not ‘fresh’ unless they are peeled, and some say the storage time is up to a month.
If you’re not sure how you’ll use your bananas, cut them up before freezing them. This will make it easier to measure them by the cup (or however much your recipe calls for).
If you place unfrozen banana slices in a freezer container and place them in the freezer, they will freeze into a large clump that will be difficult to separate later. Flash freezing avoids this problem because it allows bananas to be frozen in individual pieces. So, when a recipe calls for bananas, you can reach into the bag and scoop out as much as you need — no shredding required.
