Banana bread is one of my favorite quick breads. My chocolate chip banana bread is probably the best on the planet (more like a dessert), but I decided it was time to post my favorite classic recipe. It turns out perfectly every time and is enough for two loaves of bread!
Fast And Easy Banana Bread
I adapted this recipe for my chocolate chip banana bread, but used less sugar, less sour cream, and more bananas to really make the banana flavor pop. It’s so delicious and the perfect way to eat it on top of ripe bananas that no one will eat it. My whole family loves it!
Delicious Banana Bread
They make the perfect breakfast, afternoon snack, or light late-night dessert when you’re craving something sweet. I like warm butter, but it’s also delicious with peanut butter or a dollop of Nutella. You can even turn the recipe into pancakes for an easy option. Very tasty!
For banana bread, you should always use ripe bananas (with brown spots). Never use yellow/green bananas. Soft bananas are very easy to mash and help to add moisture to the bread. The browner the banana, the sweeter the taste.
I like to make banana bread when the bananas are at a similar stage to the two photos above. You can let the stem turn black, but you don’t want to use a completely black banana that’s damaged inside. We’re usually anxious not to let the bananas go completely dark, so the first image is the stage we usually add.
Here are some ways you can try quick ripening bananas if your grocery store doesn’t have ripe bananas.

To make the muffin: Pour the mixture into the muffin tins. This recipe makes 24 regular sized muffins. Bake for 20 to 25 minutes, until a toothpick comes out lightly golden and clean.
To make mini loaves: This mixture fills 4 small pans. Bake for 35 to 45 minutes, until a toothpick is golden brown.

If you have overripe bananas and aren’t ready to bake them, don’t let them go to waste – freeze them! I usually freeze them in bags of 2 or 3 because when you squish them, they usually make about 1 cup (which is what most banana bread recipes call for). Simply peel a banana and place it in an airtight container or freezer bag. When ready to use, thaw in bag and crush.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon zest to the bread. Similar to sour cream or curd, it adds acidity to the mixture which reacts with the baking soda to help the bread rise and give it a beautiful golden color, warm flavor and light and fluffy texture.
In the bowl of an electric hand mixer (or hand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.
Pour the mixture into the prepared pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes.
Banana bread is best served fresh from the oven, but will keep for several days, wrapped in tin foil and stored at room temperature. It can also be frozen for up to 3 months. Once completely cooled, wrap in aluminum foil or freezer bag or freezer bag. Thaw overnight on the counter before serving.

The beauty of this banana bread recipe is that you don’t need a fancy blender! All you need is a mixing bowl, a fork to beat the eggs and a sturdy spoon to stir the mixture. The amount of sugar is flexible. The original recipe called for a cup of white sugar, but most people, myself included, do well with 3/4 cup, and many are happy with ½ cup.

This recipe calls for an 8″ x 4″ pan that makes a long loaf. The recipe will also work for an 8 1/2 x 4 1/2 inch pan, resulting in a slightly shorter loaf. Since the pan is slightly larger, the baking time is shorter: from 47 to 57 minutes. A 9-by-5-inch pan will produce an especially short but still tasty loaf; Bake for 45 to 55 minutes.
This recipe does not require a blender! Cleaning is also easy. If you want, you can mix everything in one bowl.
