Once you’ve enjoyed a homemade, oversized English muffin filled with the delicious and unique ingredients popular for breakfast, you won’t want to go back to the store. Even store bought brands.

The recipe below makes 16 large English muffins. If you’re paying $3 to $4 or more for a half-dozen high-quality English muffins, you’ll save money making your own.

This will be a soft dough, so you will need to treat it a little differently than most yeast doughs. If you have a stand mixer, beat the dough with a flat beater until it starts to pull away from the sides of the bowl and becomes smooth and shiny; this takes about five minutes at medium-high speed. If you lift the guard, the dough will be very stretched.

You need to find the right amount of heat that cooks the cakes all the way through and browns them to perfection at the same time.

Cooking the cakes on very low heat for 15 minutes on each side worked well for me. However, unless you have two large griddles, this long cooking time can be problematic, as muffins waiting to be baked can rise and become crumbly.

The answer? Cook quickly on low heat and in the oven (eg 7 minutes on each side), then cook briefly in the oven.

If you notice that your cakes are browning too quickly, reduce the heat. Don’t be alarmed if they are already browned the way you want, but not undercooked; you can finish them in the oven.

You want an English muffin, not dinner, so gently pull to avoid rising further. A piece of parchment over the muffins and a baking sheet over the parchment works well for me.

If they bump and rise, use a sharp knife to gently cut them.

And remember: use a fork to divide, not a paring knife. Muffin separated with a fork will have wonderful corners and angles; there will be no cutting with knives.
