When testing this formula I tested it with different egg substitutes, such as flax eggs, yogurt, applesauce, buttermilk, etc. Finally, the baking soda + lemon juice mixture works.

The Best Vegan Banana Bread Recipe Ever (gluten Free!)
Ripe Bananas: First of all you should use very ripe bananas. The banana peel should have lots of brown spots. (See illustration above for reference.)
Avoid overripe bananas. (See the crust.) This gives the bread a funny smell and taste.
Flour: I use all purpose flour. I have had success with half all purpose flour and half whole wheat flour.
Butter: Helps make eggless banana bread. Use neutral, odorless oils such as canola, corn, vegetable, and safflower oils.
Healthy Applesauce Bread (eggless)
Lemon juice: It should be freshly squeezed. Bottled lemon juice will not have a good taste and texture.
1) Take the dry ingredients. Put all the ingredients (all purpose flour, granulated sugar, salt, cinnamon, baking powder and baking soda) in a bowl.
12) Bake in the preheated oven for 45-50 minutes or until a wooden skewer comes out. (or spaghetti) came out clean, tied in the middle.
Let cool in the pan for 10 minutes, then loosen the sides with a butter knife and turn the top onto a cooling rack. You can cut it while it’s still warm or let it cool completely and then cut it.

How to freeze? Wrap each piece in plastic wrap. and store in a freezer safe ziplock bag.
Thawed or reheated: Remove slices, place on a plate and microwave for 30-45 seconds. Check if it takes a few more minutes and enjoy. Don’t overheat it in the microwave or it will start to dry out and become chewy.
