I’ve never been able to predict exactly how many bananas my family consumes: one week we’re going through them, the next they’re sitting untouched, toasting in a bowl. This easy banana bread with a crunchy crust is my go-to banana bread recipe (if you’re looking for marbled, chocolate, chai spiced, whole wheat, or coconut, click here). The bread comes out great right out of the oven and is delicious toasted for breakfast the next day. My family prefers it plain, but feel free to add nuts or chocolate chips if you like.

For really moist banana bread, use very ripe bananas. Bananas with a lot of brown spots should be at least dark yellow, and it’s okay if the skin is completely brown.

If you have ripe bananas that you’re not ready to bake, don’t let them go to waste—freeze them! I usually freeze them in 2 or 3 bags and pureed usually makes about 1 cup (which is what most banana bread recipes call for). Peel the bananas and place them in an airtight container or freezer bag; When ready to use, defrost them in the bag and mash them.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon juice to the bread. Like sour cream or buttermilk, it works with the baking soda to help the bread rise, giving it a lovely golden color, toasted flavor and light, fluffy texture.
