Because it really is the best way to make banana bread, period. You can mix everything in a cup, you can vary the amount of sugar or banana. And the secret to its great taste? melted butter.

The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork to beat the eggs, and a sturdy spoon to mix the batter are all you need. The amount of sugar is flexible. The original recipe called for a cup of white sugar, but most people, myself included, do well with 3/4 cup, and many are happy with 1/2 cup.

You can top the cup with chopped walnuts, raisins, or chocolate chips if you like, or you can pour the batter into muffins and replace the bananas with nuts. You can even take it a step further and make chocolate banana bread.

Easy Banana Cake Recipe

This recipe calls for an 8 x 4 inch pan, which produces a long loaf. This recipe also works in an 8 1/2- x 4 1/2-inch pan, which produces a smaller shortbread. Since the pan is slightly larger, the cooking time is shorter: 47 to 57 minutes. A 9 x 5 inch pan will make a particularly short, but still delicious loaf; cook for 45 to 55 minutes.

No mixing required for this recipe! Cleaning is also easy. If you want, you can mix everything in a bowl.

This recipe calls for an 8 x 4 inch loaf pan. If using an 8 1/2- x 4 1/2-inch pan, bake for 47 to 57 minutes. If baking in a 9-by-5-inch pan, bake for 45 to 55 minutes. Note that a larger loaf size will produce softer bread.

Banana bread is one of my favorite quick breads to make. Chocolate banana bread is probably the best on the planet (as a dessert), but I decided it was time to post my favorite recipe. It comes out perfectly every time and makes enough for two slices!

You should always use ripe bananas (with brown spots) for banana bread. Never use yellow/green bananas. Soft bananas also break down easily and help keep the bread moist. The browner the banana, the tastier it will be.

I like to make banana bread when my bananas are at a stage like the two pictures above. You can leave the stem black, but you don’t want to use a completely black banana that has gone bad on the inside. We are usually very tolerant of the banana being forgotten, so the first image is the cover we usually add.
