Roasted pumpkin seeds are a great snack – especially since they’re packed with protein! 1 cup of pumpkin seeds contains 12 grams of protein and 12 grams of dietary fiber! These are high protein snacks that you can make with any flavor you want. Try making your own roasted pumpkin seeds using this step-by-step guide.
Easy Roasted Pumpkin Seeds Recipe
I found this beauty at Walmart! True, and this pumpkin was very cheap. I recommend finding a medium or large pumpkin so you have enough to make at least 1-2 cups of roasted pumpkin seeds.
I used a chef’s knife for this, which wasn’t the easiest way to cut the pumpkin. I recommend using a regular pumpkin carving knife for this – it will be great when you carve the pumpkin later!
Remove the seeds with a metal spoon. It may be easier to use your hands all the way to the bottom of the pumpkin to get the bumps off the bottom of the pumpkin.
This part is definitely confusing, but hey, those roasted pumpkin seeds are worth it! Separate the strings of pumpkin pulp from the seeds and simply throw it on a towel. You can clean it up later.
Roasted Pumpkin Seeds
Using a strainer, wash off the excess pumpkin pulp. Spread them out on a dish towel. If you dry them, you can fry them well from the seeds. Once they are dry, melt the butter in the microwave (about 30-45 seconds) and mix the seeds into the bowl with the butter.
Now, not every pumpkin makes 2 cups of pumpkin seeds, so when choosing butter and spices for your seeds, I recommend this formula:
Do you like savory or sweet? Depending on what you decide to do, you’ll choose a teaspoon of salt or sugar. For example, if you like pumpkin spice or cinnamon sugar spice, sprinkle sugar on those seeds. If it’s taco seasoning, curry, or pretzel seasoning, you’ll want to use salt.
If you decide to use all-purpose pretzel seasoning for your seeds, do not add the seasoning to the seeds yet. First, roast the seeds for 30 minutes. In the last 10 minutes, brush the seeds with egg white (split the egg), then sprinkle with spices. Roast for the last 10 minutes.

To make cleanup easier on yourself, line a baking sheet with aluminum foil and spray it with cooking spray. Spread the pumpkin seeds on top, trying not to stick them together as much as possible.
Don’t forget to stir the seeds every 10 minutes! This will help roast them evenly in the oven as you don’t want the edges of your seeds to burn. Thus, after each 10-minute segment, mix the seeds with a wooden spoon. When they are ready, let them cool completely. You don’t want to burn your tongue! Have you ever plucked your eyebrows? Use a sturdy, sharp knife to carefully remove the stem and surrounding ground from the top of the pumpkin. Be careful and pay attention here! Then use a large spoon or ice cream scoop to transfer the pumpkin seeds to the strainer. Discard large pieces of pumpkin.
If you have dry, sensitive skin, you may want to wear disposable gloves to protect your hands during this process. Pumpkin contains natural acids that can cause irritation (we speak from experience here!). That’s why you’ll find pumpkin in natural exfoliating face masks.
I have tried several techniques and here is the easiest way. Pour water over the seeds and swirl them around, removing any obvious bits of pumpkin flesh along the way. Drain off excess water.

Place two layers of large paper grocery bags inside each other (if you don’t have bags, you can use a large container with a tight lid). Add the seeds and a clean, lint-free tea towel or several paper towels. Fold and shake the bag around to seal! At this time, they should be dry enough.
For easy cleanup, spread the seeds on a large, rimmed baking sheet lined with parchment paper (to keep the seeds from sticking to the pan if you want to add any flavor). Pour the seeds into the pan and shake off any seeds stuck to the towels.
Toss the seeds with a few basic ingredients: olive oil or butter, maple syrup or honey (optional, for a little sweetness), and salt. We wait to add any spices as they will burn in the oven.
Bake at 425 degrees Fahrenheit for 12 to 16 minutes, which is enough to get browned results. Stir every 5 minutes to prevent burning. As you can see from the photos below, you’ll know the seeds are ready when they are fragrant and light golden in color. Then add spices if desired.

Change it up: You can use this method to roast other winter squash seeds, including butternut, cob, tender and spaghetti squash. Since these seeds are usually smaller than pumpkin seeds, they roast faster, so keep an eye on them.
