Are you seeing a theme here? Last week I mentioned I was on a banana bread kick, and from recent posts, that banana kick is going strong. I kind of chuckle that this is my second banana bread post in a week since my husband doesn’t even like bananas. He won’t even eat it. My kids love it and obviously – I love it. I’ve been trying to fix making this banana oat bread three times a week, so we’ve had plenty of bananas in our house for a while now. My husband will be happy that I’m finally posting this and that I can now move on to another recipe.
Healthy Honey Oatmeal Banana Bread
For some reason, I have a hard time picking a favorite banana bread recipe and sticking to it. Maybe it’s because I’ve been blogging for so long that I’m used to trying new things. Or maybe it’s because there isn’t one banana bread recipe that works for every situation. When you want something that really stands out, you need peanut butter and chocolate chips. You want a banana bread that tastes more like dessert than bread. You need a recipe that makes bananas perfect for an after-school snack. And that’s just the tip of the iceberg – there’s a reason for bananas in any case.
I would call this banana oat bread the perfect breakfast banana bread. Oats give it a hearty texture and I think it’s perfect for breakfast. This is a recipe that will stay with you for a while and give you the energy to get through your morning. Sweet but not overly sweet. Don’t forget to mention the amount of banana in this bread too. All those bananas make a perfectly moist banana.

Make sure the bananas are ripe! I prefer to wait until the bananas are completely black on the skin, which is guaranteed to be super sweet.

Do not mix more batter than you need. The more you stir, the softer your bread will be.
Keep an eye on it as it bakes, as you’ll want to cover it with foil as it browns. If you don’t cover it, when the bread is finished baking, the edges will be dark.
All ovens cook differently, so start checking your bread around 45 minutes. You’ll know it’s done when a toothpick inserted in the center comes out clean. The top will be very firm and not very crisp.

Preheat the oven to 350ºF. Grease a 9×5 inch loaf pan. You can line the pan with parchment paper, then spray with nonstick spray.
In a large bowl, combine the brown sugar, vegetable oil, milk, and eggs. Mix until combined. Stir in the bananas.
In another bowl, combine the oats, flour, baking powder, baking powder, salt, cinnamon and nutmeg. Add the dry ingredients to the wet ingredients one at a time and mix.

Pour the batter into the prepared loaf tin. Transfer to the oven and bake until a tester inserted in the center comes out clean, about 60 minutes. To prevent the bread from browning too much, you need to cover it with foil halfway through the baking time.
Let the bread cool for 10 minutes before removing from the pan. Allow to cool completely before cutting.

If the toothpick comes out clean, the banana is done and ready to be taken out of the oven. If the banana bread still has batter, you may need to put it back in the oven to give it more time to bake.
