This is my favorite banana bread recipe, which I have loved for years. It’s one of those classic recipes that you start to know by heart, like a pie crust recipe or a chocolate chip cookie recipe. This bread comes to mind first when I have leftover bananas on the table and bread that is always on rotation in my fridge. It is the best banana bread recipe and if you haven’t tried it yet, now is the time.

The Ultimate Moist Banana Bread

I have tried many banana bread recipes and this is my favorite. The students loved them! What makes it so beautiful? This banana bread has more bananas than any banana bread I’ve ever made. 2 cups whole mashed bananas, about 4 large bananas. More bananas add moisture and flavor to the finished product.

Did you know you can use your electric grill to smoke bananas? Smash or cut the blanched bananas into large chunks and place them in the bowl of your stand mixer – or use a standard mixing bowl with your hand mixer. Start to beat on low, then slowly increase to high speed as the bananas reduce to mashed bananas. Transfer the bananas to another bowl and use a bowl to mix the banana bread ingredients. (No need to clean it – some leftover mashed banana is good.)

For the banana bread, add 3/4 cup chopped nuts to the bread dough; I like to use pecans or walnuts. I absolutely love the sweet, spicy, and crunchy crunch nestled inside the banana bread crumbs. Feel free to leave them out if you’re not a fan of banana bread!

The beauty of this banana bread recipe is that you don’t need a fancy mixer! A mixing bowl, a fork for mixing the eggs, and a sturdy spoon for mixing the flour are all that is needed. The amount of sugar changes. The original recipe called for a cup of white sugar, but most people, including myself, do well with 3/4 cup, and are very happy with 1/2 cup.

You can throw in a cup of chopped nuts, raisins, or chocolate chips if you want, or put the batter in muffin tins and make banana muffins instead. You can go a step further and make chocolate banana bread.

Since the pan is large, the baking time is short: 47 to 57 minutes. A 9- x 5-inch pan will yield a shorter but tastier loaf; cook for 45 to 55 minutes.

If you have ripe bananas and you’re not ready to cook them, don’t let them go to waste – freeze them! I freeze them in 2 or 3 bags, as when weighed, they usually yield about 1 cup (that’s what the banana bread recipe calls for). Simply mash the bananas and store in an airtight container or freezer; when ready to use, thaw them in a bag and then crush them.

Healthy Banana Bread Recipe

Lemon juice may seem like an odd ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread. Like sour cream or butter, add an acid to the dough that reacts with baking soda to help the bread rise and give it a nice golden color, a toasty flavor, and a light, fluffy texture.

In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.

Pour the batter into the prepared loaf pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes.

Banana bread is best fresh from the oven, but will last a few days, wrapped in foil and stored at room temperature. Can be frozen for up to 3 months. Once completely cool, wrap tightly in aluminum foil or plastic wrap, or place in a freezer bag. Thaw overnight on the counter before serving.
