I love a good banana bread. But it’s easy to make one and try to make it dry and smooth. Not with this recipe! This super moist banana bread recipe is not only delicious but healthy too!
Easy Moist Banana Bread Recipe 2 Bananas
There are a few tricks to making the best moist banana bread. Using olive oil helps keep it moist, as with lots of bananas; I used four, which helps sweeten the bread naturally. This means that there is not a lot of sugar in the recipe, but it is still sweet.

This banana bread recipe also uses whole wheat and white flour, which helps boost nutrition but still maintains a light and fluffy texture.
I like to use olive oil for baking. Unless you’ve been living under a rock, you know that olive oil is one of the healthiest fats out there and that cooking with olive oil is a big deal with the Mediterranean diet. But health benefits aside, I prefer it over butter in most situations.
Using cooking oil keeps things moister than butter. Best of all, it stays moist for days, and baked goods with butter dry out quickly.
I also love that you don’t need to soften or melt it because it’s thick; Pour the olive oil into the bowl and you’re done!

And since the banana bread batter is poured into a greased loaf, the banana bread is very easy to take out. Just turn the pan upside down
That said, the butter is delicious too. Feel free to use it in this recipe, or any other oil like coconut or canola. I recommend serving the finished product warm, with a generous dollop of salted butter. YUM
Then, when I’m ready to bake, I pop them in the microwave, cut off the top, and slide the banana out of the skin!
Full disclosure: It was absolutely disgusting when it came out. It’s soft and slightly haunting. But, I swear, this trick is a life changer when baking with bananas!
Ridiculously Easy Banana Bread
The best thing is that when frozen this way, it becomes very smooth, so you don’t have to worry about mashing the banana separately. Slide it into the bowl and mix!
I recommend using a glass mold to make banana bread. I’ve used metal before, and almost always, the edges of the bread are dry and burnt.
This is because the darker the pan, the hotter it gets in the oven. And if it’s too hot, overcook the edges of the banana bread before it has a chance to cook inside.
Enter: the GLASS oven. I like it the same way I like using white ceramic oven dishes – they don’t overheat and overcook some parts of what you’re making. I have them and they have served me very well!

Baking time varies based on several factors: altitude, banana size, egg size, oven temperature, etc.
Be sure to check for doneness by inserting a toothpick (or cake tester) into the center of the loaf and pulling it out. If it comes out clean, the bread is done! If the raw dough is sticky, it needs more time.
You can store this olive oil banana bread at room temperature for a few days and it will be very moist and delicious. Make sure to keep it in an airtight container. You can keep it in the refrigerator for a long time, and it can be frozen for several months.
I usually cut it up and put it away so I can grab a piece for breakfast without worrying about it going off the cutting board. I like to microwave it, but if I have time, warm banana bread is great.

First, a quick disclaimer. I am guilty of claiming that some of my recipes are the best of the best. I realize it’s a bit subjective. But I promise you, I don’t take this term lightly.
This banana bread recipe has been one of my favorites since 2013! Yes, I have tried other recipes too, but I always come back to this one. I wouldn’t lie if I said that I make this quick bread recipe almost every week and it never lasts more than 3 days!
However, over the years I have discovered that frozen overripe bananas make a good banana bread irresistible!
Because when thawed, bananas become super pasty and runny. All these juices are golden! Do not drain the liquid, it will make the bread moist and delicious.
Healthy 5 Ingredient Flourless Banana Bread
When you have good, ripe bananas with dark spots all over them, refrigerate them. (Yes, black bananas are totally okay!)
Use a very large bowl to make the dough. I use a 4 qt jar (the largest jar in this set).
To test for doneness, insert a long wooden skewer or toothpick. If it comes out clean, the bread is done!

Best Banana Bread
However, I always keep them in the fridge. Mainly to keep them out of sight, or they’ll be gone in a few hours.
To keep the banana bread moist, be sure to cover it with plastic wrap or place it in an airtight container.
To serve, I microwave a slice for 30 seconds or so and it tastes like it just came out of the oven!
