Let’s talk about the special ingredient in these gluten-free chocolate chip cookies: corn! What exactly does cornstarch do and why do we use it to make cookies?
Corn is commonly used in recipes to thicken things (such as sauces or soups). This is what it does when you use a cookie! Chocolate cakes with cornstarch will be slightly thicker, which in turn makes them extra chewy. While the outside will be nice and crispy, the inside will remain super soft.
So, if you want soft and chewy chocolate chip cookies, you should definitely add cornstarch along with the flour. Another bonus: cornstarch is gluten-free, so using it in these gluten-free cookies seems like a no-brainer!

After baking soft and chewy chocolate chip cookies, the real trick is to keep them soft and chewy before eating them. The beauty of this gluten-free chocolate chip cookie recipe is that as long as you store them properly, they stay very easy.

You can store the cookies in an airtight container or resealable bag at room temperature, and they should be soft for a few days (assuming you don’t eat them all in that time). A classic trick for storing baked goods is to put a piece of bread in a bag/container with them. The cookies will absorb moisture from the bread over time, so the bread will go stale, but the cookies will remain soft.
Chocolate chip cookies can be frozen after baking if you want to keep them longer, but who wants to freeze them when you can eat them?

Check out this texture first! These cookies are definitely on par with gluten-free chocolate chip cookies. They have all the chew and crunch that gluten-free cookies lack.
This recipe also calls for 2 types of gluten-free flour – all-purpose gluten-free flour blend and oat flour. Both are very easy, making this recipe super easy.
The dough should also be chilled for 2 hours. Most of my cake recipes call for chilling the dough overnight, but they don’t! Just prepare the dough in the morning, and you can have freshly baked chocolate chip cookies
Last but not least, these cookies are not cake. Gluten-free cookies tend to be on the fluffy and cakey side because it’s hard to achieve that chewy texture without the cake falling apart. But using brown sugar and extra egg yolks, these cookies are dense and chewy perfection.

Cookie dough, like any other, is made by creaming butter and sugar, adding vanilla and eggs, then finishing with dry ingredients and chocolate.
This is another important step that cannot be skipped! Chilling the dough allows the dry ingredients to fully absorb the wet ingredients, creating a firmer dough that spreads more evenly when baked.
Roll out the cookie dough with a large cookie cutter beforehand. Dot the top with a few extra chocolate chips and transfer the unrolled dough to the refrigerator. Chill them for at least 2 hours, but longer is fine.
If you must refrigerate them overnight, refrigerate them for 2-4 hours, then wrap the tray in plastic wrap and continue to refrigerate overnight. Do not let the dough dry out.
