This recipe also calls for 2 types of gluten-free flour – all-purpose gluten-free flour blend and oat flour. Both are very easy, making this recipe super easy.

The dough should also be chilled for 2 hours. Most of my cake recipes call for chilling the dough overnight, but they don’t! Just prepare the dough in the morning, and you can have freshly baked chocolate chip cookies

Last but not least, these cookies are not cake. Gluten-free cookies tend to be on the fluffy and cakey side because it’s hard to achieve that chewy texture without the cake falling apart. But using brown sugar and extra egg yolks, these cookies are dense and chewy perfection.

Cookie dough, like any other, is made by creaming butter and sugar, adding vanilla and eggs, then finishing with dry ingredients and chocolate.

This is another important step that cannot be skipped! Chilling the dough allows the dry ingredients to fully absorb the wet ingredients, creating a firmer dough that spreads more evenly when baked.

Roll out the cookie dough with a large cookie cutter beforehand. Dot the top with a few extra chocolate chips and transfer the unrolled dough to the refrigerator. Chill them for at least 2 hours, but longer is fine.

If you must refrigerate them overnight, refrigerate them for 2-4 hours, then wrap the tray in plastic wrap and continue to refrigerate overnight. Do not let the dough dry out.

When the cakes came straight out of the oven, they spread a bit. The center will still be soft and doughy, and the edges will be a light golden brown.
