There are a few tricks for making the ultimate moist banana bread. Using olive oil helps keep it moist, as does using a lot of bananas – I’ve used four – which also helps sweeten the bread naturally. This means there isn’t a lot of sugar in the recipe, but it’s decadently sweet nonetheless.

This banana bread recipe uses both white flour and wholemeal flour, which helps to increase the nutritional level but maintains a light and fluffy texture.

I love using olive oil for cooking. Unless you’ve lived under a rock, you know olive oil is one of the healthiest fats around, and cooking with olive oil is great with Mediterranean cuisine. But aside from the health benefits, in many ways I like butter more.

Using oil for cooking keeps ingredients moist much longer than using butter. Best of all, it stays moist for days after, while products cooked with butter tend to dry out faster.

I also like that you don’t have to soften it or melt it from a solid – just pour the olive oil into the bowl and you’re good to go!
