Many people wonder, “How do you make banana muffins from scratch?” I’m here to show you how easy it is, so you can ditch boxed muffin mixes for good!

In a medium bowl, whisk together 1 ½ cups flour, baking soda, baking powder, sea salt and cinnamon and set aside.

In a large bowl, mash the bananas. Add the melted butter, eggs and vanilla and stir until the mixture is homogeneous (coat all).

Add the brown sugar and granulated sugar to the wet mixture and stir to combine. It is important to make sure that the brown sugar breaks up when it comes in contact with the wet ingredients.

Bake in the preheated oven for 15-17 minutes until a toothpick inserted into the center of a muffin comes out clean. These easy banana muffins are baked at 400 degrees and I found they only take 15 minutes to make in my convection oven. I recommend checking them beforehand if your oven is hot. The reason for the higher temperature is to achieve nice round muffin tops!

Do you always have a lot of bananas on your table at the end of the week? Over the years I’ve shared some of my favorite ways to use up excess bananas including my homemade banana bread, banana cake, and banana blueberry baked oatmeal.

So today I want to share another amazing way to use ripe bananas with these easy banana muffins. One of the things I love about this recipe is that you don’t need a mixer to make it. You only need two bowls and about 30 minutes to make these muffins.

I think these muffins are wonderful plain, but if you want to add some chopped nuts, chocolate chips, or even blueberries I have added some options for that. These also freeze well, so you can make a batch and pop them in the freezer for breakfast or an easy snack when you need them!

To make these banana muffins, you start by mixing your dry ingredients together – all-purpose flour, baking soda, cinnamon, and salt.

After mixing the dry ingredients, you will need to mix the wet ingredients in a separate bowl. For the frosting, you’ll use some melted butter, brown sugar, eggs, vanilla extract, and mashed bananas. Let’s break down the individual elements:

After mixing the dry and wet ingredients, you will need to mix the two together. You may see some lumps in your dough, but that’s okay! You want to avoid over mixing the batter because it can lead to dense muffins.

The muffins should bake for 16-20 minutes, you’ll know they’re done when a toothpick inserted in the middle comes out clean. Once the muffins are cooled, you can store them in a freezer bag or container for up to three months. When you’re ready to enjoy them, thaw at room temperature or microwave each muffin for 20-30 minutes.

I do not recommend using only whole wheat flour because it breaks out the muffins and makes them dense. You can use 1/2 whole wheat and 1/2 all purpose flour in this recipe if you prefer.
