How To Make Banana Bread When Your Bananas Aren’t Ripe Enough
This is the best in the cake-not-cake category. The piece is similar, but it doesn’t taste like cake and it’s closer to the texture of banana bread (without the banana). The lemon flavor POPS, thanks to lemon zest and lemon extract (extract is optional and adds great flavor; make sure you use PURE lemon extract).
When the lemon cake is done, I drizzle it with some lemon glaze, if you’re cutting calories it’s optional. This is a great cake for breakfast, brunch, or dessert, and it won’t make you feel like you ate cake at 9 in the morning.
Skimmed milk: Make sure you buy dry, not powdered. It comes in a box at the bakery. It adds more flavor and a bit of fat to the bread, which makes it nice and yum.
Lemon Zest: This is where all the flavor is! Don’t let it be. Learn how to peel a lemon!
Easy White Bread Recipe
There is no juice on the cake itself because the lemon juice does not add much flavor. The best flavor of lemon is the peel and the extract.
You can skip the extract if you have to, but don’t leave out the zest! Adding lemon juice will not change the taste much.
This recipe is made for 8 x 4 inch loaves. You can use a 9×5 inch, but the bread won’t be as good as it should be on top.
I always recommend following the directions and using what is called for, so take a can of evaporated milk for best results. But in a pinch, you can substitute milk, non-dairy milk, half and half or cream. The results may vary somewhat as shown in the picture.

Like I said before, I don’t make tough decisions. The decision will break, so I don’t bother trying. Losing weight is of course something I want to do, like eating better, drinking less alcohol and exercising more. Don’t we all want to do that all the time? But of course I have to be serious. My tan isn’t growing and my pants are shrinking, so… eating better becomes my priority. Not a decision, just a goal.
Last year I decided to be happy. 2015 was a very tough year and I hope to make 2016 even better and you know what? I did. I am very proud of myself for making it through the last year. As I have said for a long time, I started to overcome my anxiety in the beginning of 2016. I took my life back and because of it, I am the same person. happy person. I’ve been able to develop strong friendships online and in real life by forming relationships with women I now call best friends and sisters. I’ve become a better and happier mother and wife, and I’ve been able to stay strong through some tough times these past few months.
My resolution for this year seems to be: be happy, have fun and enjoy life. I’ll be 40 later this year and I want to enjoy every minute of it. Time flies so fast now that I want to cling to every exciting second and live in the moment, have more fun and be happy with it. As I get older, I get better and do the things I want and leave others. I still have a lot to learn, but I’m enjoying this time in my life. (Now, if only I could freeze Jordan as an 11-year-old, that would be even better!)
My decision for my business is the same: I want to enjoy myself. I want to have fun and love what I do. 99% of the time I still love this job (I get to write about food! And eat!) and I consider myself lucky. The times I don’t like what I do are few and far between and I want to keep it that way, so I decided to do what makes me happy on this blog.
