With only 5 grams of carbs per serving, this recipe is even keto-friendly if you eat in moderation!

Step 1: Preheat your oven to 350F (180°C) and line a 7.5-inch loaf pan with parchment paper. put it aside.

Step 2: In a large mixing bowl, add the mashed banana, egg, and melted coconut oil. Beat with an electric mixer until the mixture is smooth and fluffy.

Step 3: In a separate bowl, mix together the almond flour, xanthan gum, granulated stevia, cinnamon, nutmeg and baking powder.

Vegan Banana Bread (easy + Healthy)

Step 4: Add the wet to dry ingredients and mix until the batter is smooth and completely combined. Fold in chopped walnuts or pecans.

Step 6: Bake for 35 – 40 minutes or until a toothpick inserted into the center comes out clean.

Step 7: Remove and let cool for 15-20 minutes in the tin. When the bread feels cool enough to remove, remove from the tin and let cool completely before slicing.

Here is a brief background

An important part of going dairy free was switching to home baked bread. At that time, every last loaf of bread in local stores contained milk in some form (milk powder, cheese, whey, caseinate, etc.). Vegan brands eventually emerged in popularity, but were still too expensive to warrant regular purchase.

I’ve learned to enjoy kneading the dough for good homemade yeast bread (great stress relief), but I don’t always have time for the process. So I wanted to create a quick and nutritious bread that I could use for my morning bread.

And when I want a little extra sweetness, I add some indescribable sweetness to the food. I have included that as an option in the recipe below.
