This bread is the first thing that comes to mind when I leave the spotty bananas on the counter and the bread in constant rotation in my freezer. It is the best banana bread recipe ever and if you haven’t tried it yet, now is the time.
Banana Bread (the Best)
I have tried many basic banana bread recipes and this is my favorite. Readers are in love too! What makes this so great? This banana bread has the most bananas of any banana bread I’ve ever made. 2 whole cups of banana puree, which is about 4 large bananas. More bananas add more moisture and flavor to the finished product.
Did you know you can use your electric mixer to mash bananas? Smash the spotty bananas or cut them into large chunks and place them in the bowl of your mixer – or use a regular bowl and your hand mixer. Start beating on low, then gradually increase to medium-high speed as the bananas break down into banana puree. Transfer the bananas to another bowl and use the mixing bowl for the banana bread ingredients. (No need to peel it—some leftover mashed bananas are fine.)
