The original recipe called for one cup of white sugar, but most people, myself included, do well with 3/4 cup, and most are happy with 1/2 cup.

If you like, you can add a cup of chopped hazelnuts, raisins or chocolate chips, or put the batter in muffin tins and make banana muffins instead. You can even go a step further and make chocolate banana bread.

This recipe calls for an 8-by-4-inch loaf pan in a tall bread maker. The recipe will also work in an 8 1/2 x 4 1/2 inch loaf pan, producing slightly shorter loaves. Since the pan is slightly larger, the cooking time is shorter: 47 – 57 minutes. A 9- x 5-inch pan will make an especially short but flavorful loaf; Bake for 45-55 minutes.
