This recipe also calls for just 2 types of gluten-free flour: a mix of gluten-free oatmeal and oatmeal. Both are very easy to obtain, which makes this recipe very easy.

The dough must also be refrigerated for only 2 hours. Many of my cookie recipes require the dough to cool overnight, but not these! Just make the dough in the morning and by noon you will have freshly baked chocolate chip cookies.

Last but not least, these cookies are NOT cakes. Gluten-free cookies tend to be puffy and sticky because it’s hard to get that chewy texture without the cookies falling apart. But with the use of brown sugar and extra egg yolk, these cookies are thick and chewy.

The biscuit dough is obtained like any other, by beating butter and sugar, adding vanilla and eggs, then the dry ingredients and chocolate.

This is another important step that you cannot skip! Chilling the dough allows the dry ingredients to fully absorb the moist ingredients, creating a firmer dough that will roll out more evenly when cooked.

Collect the cookie dough first with a large spoon. Decorate the surface with a few more drops of chocolate and transfer the uncoated dough to the refrigerator. They should be refrigerated for at least 2 hours, but longer is possible.

If you need to let them cool overnight, let them rest in the refrigerator for 2-4 hours without a lid, then wrap the pan in cling film and continue refrigerating overnight. This prevents the dough from drying out.

This is the trick that makes these cookies the BEST gluten-free chocolate chip cookies… even though it may sound weird!

When the cookies come out fresh from the oven, they will stretch out a bit. The center will still be soft and crumbly and the edges will be slightly golden.

When you take them off, use the inside crease of the fork to push them out the sides. Work quickly because when the cookie cools, the sides will harden, making it more difficult to round the cookie. See the image above for how it works.

This creates perfectly round cookies with crunchy, chewy ridged edges without overcooking in the center. Sprinkle with some sea salt and transfer to a rack to cool while you cook the second batch.

I always choose Bob’s Red Mill 1-to-1 Gluten Free Flour Baking. It’s already woven with xanthan gum (a gluten-mimicking ingredient) and never fails. This is the perfect gluten-free flour blend, as close to regular flour as possible!

The other flour in this recipe is oats. This flour is highly absorbent, so it works very well to create that loose but firm texture.

Yup! This is how I usually work with oatmeal as I always have oats on hand. Just add gluten-free oats to a food processor and blend them into flour … or as close as possible. It’s okay if it doesn’t look like a perfect powder.

Just make sure you’re using gluten-free oatmeal, be it instant or old-fashioned. Both will work!

If you can’t use oats, another great option is almond flour. These two are great substitutes for each other in most cases. Although almond flour is not as absorbent as oatmeal.

For best results, try using extra fine almond flour. Just make sure the cookie dough is easy to form and holds its shape. If the dough is too thin, add a couple more tablespoons of the all-purpose gluten-free flour mixture.

The cornstarch chocolate chip cookies will be slightly thicker, which in turn will make them more chewy. And while it gets nice and crunchy on the outside, it stays very soft on the inside.

So really, if you want perfectly soft and chewy chocolate chip cookies, you definitely need to add cornstarch along with the flour. Another plus: cornstarch is gluten-free, so it seems like a no-brainer to use it in these gluten-free cookies!
