As I’ve convinced myself that baking isn’t “my thing,” baking, uh, becomes…my thing. There’s something about that that I found a little soothing. I just watch my mixer whirring, my hands sticky with flour and butter, and the sweet smells wafting from the oven.
It slows life down a bit and after being around people all day I was in the mood to bake in silence this afternoon. Just me and the sounds and smells of my kitchen. I find it the perfect way to relax – and probably expand my waistline.
I decided to raid the pantry and fridge to see what I could put together. I saw that I had some pretty decently ripe bananas and immediately thought of banana bread. Because who doesn’t love banana bread staring at them every time they walk into the kitchen? Correct.
I didn’t want to make plain old banana bread, so I was looking for chocolate chip banana bread and decided to kick it up a notch with chocolate chips and walnuts.

Combine the chocolate chips and nuts in a separate small bowl. Add 1 tablespoon flour mixture and fold to coat.
In the bowl of an electric mixer or in a large bowl with a hand mixer, beat the butter until light and fluffy, 2-3 minutes. Gradually add sugar, beating until well combined.
