These banana muffins are different from my grandma Eva’s moist banana bread (the best ever!). Funny, in the weeks after Alice was born, I made this banana bread recipe every morning to pass the time while we waited for her to arrive.

This is one of those recipes that is in my bones and the tastiest way to use ripe bananas. And what better way to add a little something to this banana muffin recipe than by adding some chocolate chips?

Bananas never go bad in our house, although the green-skinned fruit always ends up in some kind of quick bread. However, have you ever noticed that quick breads are never baked quickly? Baking a whole loaf can take more than an hour!

But these quick and easy banana bread muffins deserve to be called quick bread: their compact size means you can go from mush to mouthful in less than 30 minutes (well, maybe 40…before you get started). However, compared to the nearly hour-long baking time of most breads, this is a significant time saver.

If you ask me, banana bread might be one of the biggest food groups (along with French fries, tacos, matcha and chocolate). I mean, it’s just as important as a daily serving of fruit, right? (Yes. Se.)

These moist, delicious muffins stay moist for days (we had 1 muffin left after 6 days and it was still as moist as the day it was baked). It must be a banana charm or something because regular muffins never store that well.

Luckily (well, it’s actually geometry and not luck, if we’re being technical), most banana bread recipes made in standard loaf pans yield about a dozen muffins. This is true whether you’re making specialty bread, double chocolate, chocolate peanut butter, or even a black sesame swirl…all of these banana bread recipes can easily be made as muffins instead of bread.

Conversely, this muffin recipe can also be made in a regular bread pan if you want a whole loaf of banana bread instead.

The recipe is similar to my original banana bread recipe, except baked in individual muffin tins. Oh, and despite my skepticism about nuts in banana bread, I decided to include them here, pecans, not walnuts (which I still feel strongly about not using in baked goods).

There’s also a few tablespoons of yogurt, which adds texture and moisture to the bread, while also adding some extra acidity for the baking soda to do its job.

The mixes are completely customizable; while I have strong feelings about walnuts in my baked goods (brownies, I’m looking at you), I think pecans are a good addition, but other nuts can work well instead. The chocolate chips are also optional, although I don’t see why you would take the chocolate out of something, but hey, do it.

The best bananas for banana bread are the ones you said you were going to throw away yesterday, but forgot. Bananas have come so far that you would never think of eating them raw.

You can also freeze ripe bananas if you find yourself with a ton to use up (in this year’s grocery sale, I think everyone mistakenly ordered 7 BUNCHES of bananas instead of 7…or maybe that’s just us?)

To dry bananas, peel them and seal them in an airtight bag or container, seal and freeze for up to six months. I put the bag in the same steps I use to make banana bread, so 2-3 bananas per bag. Thaw them overnight in the fridge and, even if they’re a little watery, they’ll be ready to bake into perfect, delicious banana bread the next day.

Too Many Bananas? Make Banana Muffins, Bread, Or Chips

I have to say that these tulips make even the most ordinary muffins look something special. You can buy pre-made tulip paper in a variety of colors (here’s the actual paper I used).

You can also make it yourself: Simply cut out 6-inch squares of parchment paper and use a juice or cake glass (something with a flat bottom that’s slightly smaller than the bottom of a muffin cup) to press into a muffin pan and squish. as well as stacking.

Regular muffin papers are fine too, although I don’t think you can overfill them (these muffins don’t rise a ton, be careful not to fill your cups, no matter the size, more than 3/4 full (approx 1/4 cup or full large cookie scoop).

You really want to hit the sweet spot, as far as giving goes, something like banana bread (as opposed to, say, cookies or brownies) isn’t very appealing if it’s not baked. Also if it is cooked and dry. For me it was exactly 18 minutes: depending on your oven you may need less or more time.

Fortunately, the skewer test is reliable here – just insert a toothpick or pastry tester into the center and it should come out with a few soft bits. If the dough is still sticky, wait a few more minutes. I also like to try two muffins on opposite sides of the pan to calculate the hot spots in the oven (for us, the back right side is hotter, if your oven is uneven, it’s not a bad idea to turn part of the muffin).

Standard-sized muffins take about 18-20 minutes to bake, compared to full-sized loaves, which typically take 50-60 minutes. Another reason I love these muffins: the satisfaction comes fast.

You can also make this recipe in a standard sized loaf pan (lined and lined with parchment). Bake for about 50 to 60 minutes, or until a long skewer inserted into the thickest part comes out with a few moist crumbs attached.
