Small Batch Bran Muffins

Mix eggs, milk, bananas, molasses and vanilla in a bowl. Add the eggs to the flour mixture and mix until just moistened.

Spoon 1 tablespoon batter evenly into prepared muffin cups. Bake for 10 minutes or until a toothpick inserted into the center of a muffin comes out clean. Warm the muffins in the pan for 5 minutes on a wire rack. Serve hot or at room temperature.

Welcome to #AKMuffin week! As many of you know, I have been scouring the internet for good muffin recipes since 2011. Call me Muffin Eater, Muffin Queen or Muffin Lady. Regardless of the name, there is no such thing as too many muffins.

Although muffins are my specialty, they are my grandmother Gloria’s favorite thing to bake. Before my grandmother passed a few years ago, she always baked muffins for dinner. There are two peas in a pod. We read about my grandfather to this day, and remember the little things he did that kept him alive.

My grandma’s favorite muffins were banana nut, but he loved my grandma’s famous bran muffins. I asked him for this recipe a few months ago and he finally gave it to me. They are tall, sweet, flavorful and the perfect muffin to spread on anything you like. My grandfather liked honey and butter, but I like milk and jam.

Mini Banana Bran Muffin

For those unfamiliar with the nickname Gloria, she is my grandmother with a beautiful spirit. He is Puerto Rican, and most of his cooking is Spanish cuisine. Nana (grandmother) taught her how to cook everything from scratch when she was a little girl. Since then, it has been one of his favorite things.

When my grandmother wasn’t making pozole, empanadas, and arroz con pollo, she was baking muffins the size of my face. Give it a good half hour and it will make a wonderful meal, but give it two hours and you will have a wonderful meal. He takes care of all the food he makes with love, putting the utmost love into his creations – a special quality. He throws his soul into the soup, and he throws his life into the Spanish rice. Cooking is like an expression for him, everything is always done with love.

These muffins are made with beautiful ingredients, so let’s talk about what I want to highlight:

Whole grain flour is used. My favorite version is from Bob Red Mill. You can use white wheat flour with very good results.

Oatmeal Raisin Bran Muffins

Wheat bran provides good fiber, but I’m sure you can use oat bran if you have that. You can buy wheat here as it can sometimes be difficult to find.

Applesauce: This helps add moisture to the muffins. I think using mashed bananas would work just as well.

Blackstrap molasses: I didn’t realize how beneficial blackstrap molasses was until I started using it a few years ago. In fact, it is the best kind of molasses and contains many vitamins and nutrients. Plus, blackstrap molasses adds a delicious flavor to these muffins—almost as sweet as gingerbread. Also, did you know that 1 tablespoon of molasses provides 20% of your daily iron needs + good amounts of potassium and magnesium? I am healthy now.

Virgin Coconut Oil: I like to use virgin coconut oil for flavor and to keep this recipe free. However, you can use clarified butter or vegan butter.

All Bran Muffins Recipe [with Applesauce]

Nutrition: Provides 5g of fiber, almost 5g of protein and 10% of your daily iron needs. Add some milk for a really filling snack.
