This recipe was inspired by a reader who asked for a recipe for corn muffins. I tried the recipe two different ways – one with cornmeal and the other with wheat corn. Bran is good for your health. Also, whole wheat or whole grain corn can be used in this corn muffin recipe. If you use whole grain cranberries in this recipe, the muffins will be slightly less sweet and have a more cranberry-like flavor than cereal.

Corn: These corn muffins are delicious with both whole grain and whole grain corn. All cornmeal muffins will have a slightly sweeter flavor than the prominent corn flavor when using whole wheat flour. And, full of corn fiber to help you feel fuller, it’s a great way to start your day!

I found a little treasure, cleaned it up a bit and couldn’t wait to share it with you! These are the best corn muffins we’ve ever had, and I love that they’re healthy too.

If you check the ingredients list of most muffins, you will quickly discover that they are actually (what I call) “secret cake”. 100% all-purpose flour is high in sugar, and often a mountain of batter, with minimal nutritional benefits.

Instead, these low-fat dairy products contain whole wheat flour, all-purpose flour, lots of wheat bran, eggs, butter, butter, raisins and relatively little sugar, making them very convenient for one. healthy breakfast The great thing about these little guys is all the fiber in these corn muffins, with 3 eggs I find they keep me full for hours.

I whipped up a batch and couldn’t wait to see the results. The smell of the muffins baking was amazing and I did a little happy dance when I got into the oven and found out if they were done. As promised, the coffins were raised with beautiful domed tops.

And the taste? Better than I expected; super moist and delicious with caramel flavor made from strips and brown sugar.

I added a honey butter glaze for a nice glossy presentation and extra sweetness. It is very easy; just a dollop of honey is mixed with melted butter and rubbed into the muffins as they come out of the oven. The glass is optional, as the muffins will be delicious without it; but it gives a nice glossy (quite nice) color.

One last note…this recipe makes about 16 medium muffins. If you prefer larger muffins, divide between 12 bowls. Another option is to make small loaves with extra yeast. Grease a mini loaf pan, add the remaining batter and bake next to the muffins. It is a wonderful gift to share with friends, neighbors, colleagues and others.
