I’m excited to add a chocolate chip muffin recipe to our muffin collection. I really like muffins because I consider them an anytime meal. Breakfast, snack, late night snack, they are perfect for any time.
After making 5 batches of muffins, that’s 60 muffins GUYS, I spread the most perfect moist chocolate chip with a beautiful topping.
Bakery Style Chocolate Chip Muffins
Bakery-style buns are known for their tops. Besides, who doesn’t love them? I used a few techniques to help “raise” these buns to have a layer on them.
After mixing the dough and before placing it in the muffin tin, let the dough rest for 15 minutes. During the resting process, the starch molecules in the flour absorb the liquid in the dough, causing them to swell and give the dough a thick consistency (Kitchen Whisper). Our 15 minute rest is just a quick rest.
Bake the buns on high (425ºF) for 7 minutes, then reduce to 350ºF. When you start baking the buns at a higher temperature, the dough will rise quickly and form a dome shape.
Fill the muffin tin to the top with the batter. Yes, it goes against everything you’ve heard, but it’s important to help the bun rise.

I’ve made these muffins with both regular and gluten-free flour, and the results have been amazing. For measuring flour, I recommend King Arthur’s Gluten Free Measure. Use it as a one-for-one substitute for regular flour.
