I made this perfect banana bread recipe for my cookbook and I want to share it with you here. This recipe has all the hallmarks of the classic banana bread – it’s fluffy, tender, infused with the sweet flavor of bananas, and a favorite with kids and adults alike.

Ingredient Healthy Banana Oatmeal Bread (no Flour, Refined Sugar Or Butter)

As you can see, my homemade banana bread has many life saving properties, the first being that it will not alter your blood sugar levels. However, you can keep them all to yourself. No one will be able to say that this is healthy banana bread.

This recipe is flexible. Any of these flours will work well: I like to use white whole wheat and whole wheat pastry flour; they produce the ingredients of whole wheat without the typical nutty taste.

* You should use 2 1/2 cups to replace the oatmeal for the purposes described in my oatmeal guide.

Storage recommendations: This bread is moist, so it will keep for only two to three days at room temperature. Store in the refrigerator for five to seven days or in the freezer for three months or more. I like to cut the bread before freezing and remove the individual pieces by either letting them sit at room temperature or handling them easily.

* Differences in oil. I love the coconut oil here. I used unrefined coconut oil and I couldn’t taste it in the final product. Olive oil can give muffins a veggie note if you come in (I’ve tested with California Olive Ranch’s Everyday variety and can’t even taste it). Vegetable oil has a neutral taste, but medium vegetable/canola oil is highly refined, so I recommend using extra virgin sunflower oil or grapeseed oil if possible.

**Flour choices. Instead of whole wheat flour, you can use an equal amount of all-purpose flour, wheat pastry flour, all-purpose flour, or gluten-free all-purpose flour. Or substitute 2 ½ cups of oatmeal.

Use maple syrup instead of honey, replace eggs with flax eggs, and choose non-dairy milk (I use almond milk) or water.

Easy Gluten Free Banana Bread

Make it less fat. I would argue that this bread has a healthy amount of fat, but you can replace the oil with applesauce if you follow a low-fat diet.

Rolled Oats – Small rolled oats (or old-fashioned oats) help add texture to bread layers. Feel free to use chopped nuts or any combination you like.

The oat sugar on top adds a bit of flavor and texture that really brings this banana bread together. Made with rolled oats, melted coconut oil and brown sugar, it’s optional but definitely tasty.

On its own, the flavor level of this Healthy Banana Bread recipe is mild to moderate, depending on what you use it for. However, the optional layer of oats and brown sugar in this recipe definitely adds more flavor.
