Olive Oil Chocolate Chip Banana Bread
Ripe Bananas – Use very ripe bananas for this recipe! Regular bananas work too, but they can be a little tougher to mash or blend (and aren’t as sweet).
Gluten-Free Flour – This bread recipe uses a 1-to-1 gluten-free flour, but all-purpose flour or whole wheat flour also works well.
Rolled Oats – A small amount of oatmeal (or old-fashioned oats) helps add texture to the bread slices. Feel free to use chopped walnuts or any mixture of your choice instead!
Coconut Oil – Room temperature organic coconut oil is best for this recipe. However, softened butter works wonderfully too!

If you’re looking for a sweeter recipe, be sure to add streusel on top. You can also (or alternatively) add 2 tablespoons of raw sugar or brown sugar to the batter!
Banana bread can be stored at room temperature for 2-3 days and in the fridge for 5-7 days! It can also be frozen for up to 3 months.

As you can see, my homemade banana bread has many redeeming qualities, the main one being that it won’t send your blood sugar levels for a loop. However, you can keep them all to yourself. No one will be able to tell that this is healthy banana bread!

This recipe is flexible! Any of the following feeds will work well. I love using white whole wheat flour and whole wheat pastry flour – they offer all the nutrients of whole grains, without the characteristic nutty taste.

Storage suggestion: This bread is moist, so it will only last two or three days at room temperature. Store it in the fridge for five to seven days, or in the freezer for up to three months or so. I like to slice the bread before freezing and thaw individual slices, either by letting them rest at room temperature or lightly toasting them.
Paleo Banana Bread (super Moist)
*Oil Alternative: I love coconut oil here. I used unrefined coconut oil and can barely taste it in the final product. Olive oil can add an herbal note to the muffins, if you like (I tried California Olive Ranch’s “Everyday” variety and couldn’t even taste it). Vegetable oil has a neutral taste, but the average vegetable/canola oil is highly processed, so I recommend using cold-pressed sunflower or grapeseed oil if possible.
**Flour alternatives: Instead of the whole wheat flour, you can use an equal amount of all-purpose flour, whole wheat pastry flour, spelled flour or gluten-free all-purpose flour mix. Or, substitute 2 ½ cups oat flour.
Make it vegan: use maple syrup instead of honey, replace the eggs with flax eggs, and choose dairy-free milk (I used almond milk) or water.
Make it lower in fat: I’d argue that this bread contains a healthy amount of fat, but you can swap out the oil for applesauce if you’re following a low-fat diet.
