Most recipes call for grated zucchini, and it’s as easy as grabbing a cheese grater and getting to work!

There is no need to peel the zucchini when making zucchini bread. The skin of the zucchini is thin and soft during baking and does not affect the taste or texture of the bread. The skin also contains many vitamins and minerals.

Grate zucchini in a large food processor or food processor (do not chop or chop). You want moist bits in every bite! After it is ground, if it can be added to the batter, do not squeeze dry zucchini.

Like all quick bread recipes, this one is easy to make and only takes a few minutes to prepare. I line my bread pans with parchment paper to make the bread easier to remove.

Almond Flour Zucchini Bread

Store zucchini bread on the counter for up to two days. It is very moist so if you are keeping it for a long time you will want to refrigerate it.

Freezer: Like most quick breads, zucchini bread can be frozen. Be sure to cool down completely first. Freeze in slices wrapped in plastic and then in aluminum foil. Freezing in slices makes it easy to thaw as you eat.

Use the large side of a cheese grater to grate the zucchini. There is no need to peel it first unless it is a very large garden zucchini with thick skin.

Zucchini Bread Recipe Taste Test

Zucchini is like a chameleon and takes on the taste of everything nearby. Have you tried Peanut Zucchini Noodles? Zucchini is basically a bowl of sweet and salty peanut sauce.

Today’s zucchini bread includes cinnamon, nutmeg, vanilla and brown sugar so expect lots of nice, comforting and delicious flavors. Texture-wise, it’s not as dense as banana bread but not as light as white cake. It’s soft and moist and actually reminds me of apple bread, which is very popular in the fall months.

And let’s not forget optional toppings such as chocolate chips, chopped nuts, raisins or blueberries. Some students have made the dessert with vanilla frosting or cream cheese frosting (I will cut the recipe for cream cheese frosting). To be honest, this quick bread accepts a lot of goodies!
