Usually when I consider something “the best” it is compared to others and wins. This banana bread recipe is just that. I adapted a recipe I found on AllRecipes because I love the flavor of brown sugar and vanilla and felt that these two ingredients could enhance the original recipe.
The taste of the dough (yes I can eat it with a spoon) and the bread is very tasty and the bread is very moist and has a perfect texture. I ALWAYS have bananas that get to the sweet spot that my kids won’t eat them plain and need a recipe that works inside. Banana Bread is always made at my house and I can’t believe there isn’t a recipe on my blog for one yet. I was actually a bit shocked.

The recipe is tested and proven to be the best! Very tasty! If you’re like me, you need some good banana bread recipes. I have never been able to accurately predict my family’s banana consumption: one week we go through them all, and the next, they sit untouched, browning in the bowl. This soft banana bread with a crunchy crust is my go-to banana bread recipe (if you’re looking for marble, chocolate, chai, whole wheat, or coconut flavored versions, click here) . The bread came out of the oven and was delicious toasted for breakfast the next day. My family prefers it plain, but feel free to add nuts or chocolate chips if you like.
For very moist banana bread, use very ripe bananas. Bananas should be at least dark yellow with lots of brown spots, and it’s okay if the skin turns completely brown.
If you want to make banana bread and your bananas aren’t ripe, you have a few options:
If you have extra ripe bananas and you’re not ready to cook them, don’t let them go to waste – freeze them! I usually freeze it in bags of 2 or 3 because when kneaded it usually comes out to about 1 cup (which is what most banana bread recipes call for). Simply peel the banana and store in an airtight container or freezer bag; when ready to use, it is melted in the bag and then kneaded.

Lemon juice may seem like an unusual ingredient in a banana bread recipe, but it works well without adding lemon flavor to the bread. Like cream or buttermilk, it adds acidity to the dough that reacts with the baking soda to help the bread rise and give it a nice brown color, a toasty flavor, and a light, fluffy texture.
In the bowl of an electric hand mixer (or stand mixer), beat the butter and sugar until light and fluffy, about 2 minutes.
Pour the batter into the prepared pan and bake until a tester inserted into the center comes out clean, 40 to 45 minutes.
Banana bread is best served fresh out of the oven, but will keep for several days, wrapped in foil and stored at room temperature. It can also be frozen for up to 3 months. Because the pan is larger, the cooking time is shorter: 47 to 57 minutes. A 9 x 5-inch pan will make a shorter but tastier loaf; cook for 45 to 55 minutes.
No mixer needed for this recipe! Cleaning is also easy. If you want, you can mix everything in a bowl.
