We always have bananas in the house which means we finally have some speckled bananas ready to cook!

Easy Moist Banana Muffins

This banana muffin recipe requires a few basics like flour, sugar and milk. That’s what I love about baking – it’s basically the same ingredients for everything.

Do these banana muffins taste like banana bread? Yes! But they are lighter in color, softer and more buttery. You will like it very much.

There is a fine line between moist banana muffins and dry banana muffins, called sandpaper in cupcake wrappers. To make banana muffins moist, make sure you use a solid ratio of dry to wet ingredients. I found the muffins dry without adding liquid, but a few spoonfuls of milk solves the problem. Use a little fat (butter), brown sugar, and lots of bananas for more moisture and flavor.

So I started this last year and it has been a complete game changer every time I make banana cake, these breakfast cookies, or banana bread. Just use your mixer to mash the bananas! Peel them and break them into pieces, put them in your blender, and whiz them until they’re done. Stir the remaining wet ingredients into the bowl, then stir in the dry ingredients. Very easy.

You don’t have to use overripe bananas, but I find that these muffins are best when made with bananas that aren’t crunchy, ripe, and brown.

Of course! Let your muffins cool completely, then put them in a freezer bag and store them in the freezer. Muffins can be thawed by simply sitting on the counter for an hour or so, or by placing them in the microwave for 20-30 seconds.

I think these muffins are pretty plain, but if you want to add cut fruit, chocolate chips or blueberries, I’ve included some options for that too. These also freeze well, so you can make a batch whenever you want and pop them in the freezer for an easy breakfast or snack!

To make these banana cookies, you’ll start by mixing together your dry ingredients – all-purpose flour, baking soda, ground cinnamon, and salt.

Once the dry ingredients are combined, you will stir the wet ingredients in a separate bowl. For the wet ingredients, you’ll use melted butter, brown sugar, eggs, vanilla extract, and mashed bananas. Let’s break down each component:
