Easy Eggless Banana Chocolate Chip Muffins (bakery Style)
Although banana bread will always be one of my favorite baked goods, when I’m feeling a little down I like to make banana muffins. Muffins are especially great for sharing with the office; When I was working in a company, people would get excited when I brought cupcakes.
Most muffin recipes only make 12 or so muffins (which wasn’t enough for my tech team of 16). And therein lies the genius of the mini muffin pan – a muffin recipe that makes 12 regular-sized muffins can ALWAYS make AT LEAST twice as many mini muffins. It’s really meant to feed a lot of people.
There is an interesting fact about me: I am left to my own devices, I do not control myself. I’m the kind of person who can eat an entire order of pizza delivery in one sitting. And I know this is a problem (especially since I work as a professional recipe developer).
But that’s why I love the size of these mini muffins. IMO, they are the perfect part to make sure you don’t feel any guilt about having a special cake for breakfast.
Easy Vegan Chocolate Chip Banana Muffins Recipe
This banana muffin recipe is also fun to try if you’re a beginner baker looking to step up your game. If you’ve made banana bread, you can easily make banana muffins. The process is almost the same, but fundamentally different.
Making mini muffins is also a fun little challenge! Although filling the small holes of the loaf pan is a bit tricky (see my baker’s notes below on how to do it better!), it’s still a doable process for beginners. It’s not like, say, making pasta (which I never got around to).

While there are many tricks online to make your bananas grow faster, I prefer the old fashioned way. Put the banana in a paper bag, close it and leave it in a warm, untouched place for a few days. The heat will encourage the release of ethylene gas (the gas that causes the fruit to ripen). Then, the gases are collected in a paper bag so that the bananas ripen quickly.

I always like to pair my banana fritters with sour cream. I find it keeps them moist and flavorful. It also gives them a subtle tangy flavor that pairs beautifully with the banana! If you don’t have sour cream, substitute an equal amount of cream or full sugar-free cream (Greek or regular will work in this recipe).
Most baking recipes primarily use light brown sugar in their recipe. However, I like the extra moisture and flavor that dark brown sugar gives this recipe. But in a pinch, you can use either light or dark brown sugar.
Ultra Moist Chocolate Chip Banana Bread
Brown sugar is granulated white sugar with a touch of molasses to give it its unique color and flavor. Because brown sugar contains molasses, it adds more moisture to baked goods than granulated sugar. Brown sugar comes in two varieties: light or dark. Dark brown sugar is my personal favorite. I find it tastier because it contains more molasses.
When making mini muffins, it’s only fair that you use mini chocolate chips too, right?! I love the smaller chocolate chips because I feel they spread better throughout the pastries and give you more chocolate in each bite.
That said, regular chocolate chips also work well in this recipe. If you don’t have chocolate chips to spare, chop your favorite chocolate bar into ¼ to ½ inch pieces and use that instead! I recommend using at least 60% cocoa chocolate to really contrast with the banana flavor.
Mini muffins are about a quarter the size of a regular loaf; Each muffin well is about an inch wide and an inch deep. While I usually use 6 tablespoons of muffin batter to make a regular size muffin, I use 1 ½ tablespoons of muffin batter to make a mini muffin.
Healthy Chocolate Chip Banana Bran Muffins
The mini muffin pan I used for this recipe is from Williams-Sonoma’s Goldtouch stainless steel line, which I love, love, love (I even recommend all of their baking pans in my cookbook!). But a tip: You can find small muffin tins for less on Amazon. Whatever you choose, stick with a light colored pan (like this one). Dark colored flours absorb heat quickly and tend to burn baked goods as a result.
Mini muffin liners are available in the pantry of most grocery stores; In addition, you can also buy some online.
Unfortunately, there is no magic formula or standard rule for adjusting the baking time of regular muffin recipes for mini muffins. It really depends on the recipe you are making. Who wants to bake mini muffins until they are domed and golden around the edges; A skewer inserted into the center of the muffin should come out clean. If you are baking a regular muffin recipe in a muffin tin, I would start checking the recipe for doneness about 10 minutes before the original time.
