This banana muffin recipe calls for a few basic ingredients like flour, sugar, and milk. That’s what I love about baking – basically all the same ingredients.

Do these banana muffins taste like banana bread? Yes, completely! But they are lighter, smoother and buttery. you like

There is a fine line between moist banana muffins and dry banana muffins with sandpaper for cupcakes. To keep the banana muffins moist, make sure you use a strong ratio of dry to wet ingredients. I found the muffins dry without adding liquid, but a couple of tablespoons of milk solved that problem. Use a little fat (butter), brown sugar, and lots of bananas for more moisture and flavor.

So last year I started making this and it’s been a complete game changer when it comes to making banana cake, these breakfast cookies, or banana bread. Just use a blender to mash the bananas! Clean them and divide them into pieces, put them in a blender and blend until smooth. Whisk the rest of the wet ingredients into this bowl, then stir in the dry ingredients. Very simple.

And to turn them into a decadent treat, you can dip the tops of the cooled cupcakes in chocolate ganache. (Affiliate link – I love these natural color sprays.)

Sam’s Tip: Over mixing the batter can result in very stiff and dense muffins. To avoid this, I highly recommend kneading the banana muffin batter completely by hand. Luckily, we use melted butter in this recipe, so mixing by hand is easy!

Sam’s tip: I personally love a layer of streusel, and while I recommend it, I know not everyone wants to add sugar or plates. As you can see, the Striped Banana Cupcake pictured below is baked with a nicely trimmed and raised top. So feel free to join!

Yes, although I do have another banana pecan muffin recipe for you to try (it also uses brown butter 🤤). You can add 1-1½ cups of filling (chocolate chips work great!) to this banana muffin recipe. I recommend adding them if you are going to include dry ingredients.

Bake at 425F for 8 minutes, then reduce the oven to 350F (do not open the door!) and continue baking until the cupcakes are golden brown. This can take 7-15 minutes, so keep an eye on them!

This banana muffin recipe freezes great! In fact, I did this in preparation for Luke’s arrival, so I always had a quick breakfast when he was a newborn.

If you want to freeze yours, let them cool completely, wrap them individually in plastic wrap, in a Ziploc bag, and refrigerate. To defrost the cupcakes, let them sit at room temperature or heat them in the microwave (use only an ice cube tray or they will become hard).

Let’s bake together! I’ll tell you all the steps in my recipe and video! If you try this recipe, tag me on Instagram and you can also find me on YouTube and Facebook

Banana muffins can be hit or miss. I had wonderful cupcakes, but I was also missing something. This Banana Bread Muffins recipe was a big hit with my whole family, which is often the case. It is moist, sweet enough and has a great taste.

Most banana bread and muffin recipes call for ripe bananas. Ripe bananas are easy to mash. In addition to being easy to digest, ripe bananas are sweeter and more flavorful, making them perfect for banana bread.

You don’t have to use overripe bananas, but I think these muffins are best when made with unripe, ripe, brown bananas.

Oh no! Allow the muffins to cool completely, then place them in the freezer and store in the refrigerator. Muffins can be easily defrosted by leaving them on the counter for an hour or more, or by popping them in the microwave for 20-30 seconds.
