This is a classic recipe, the only difference is that it is wheat flour and dark chocolate instead of white flour and milk chocolate. So it’s a little less boring, but you wouldn’t even know it by eating it, that’s for sure! I’ve been doing this version for about seven years, tweaking it as I go. I recently removed 1/4 cup of honey from the recipe because when my palette changes I’m not so sweet. But when you use ripe bananas, they are very sweet, you don’t need a lot of sugar. I chose to leave the dark brown sugar on for sweetness, but that was a little too much for the whole recipe.
Place the oven in the center of the oven, preheated to 325 degrees. Brush a baking dish with juice or butter.
Place the flour, baking soda, cinnamon and salt in a large bowl and whisk to combine. Place the mashed bananas, melted butter, eggs, sugar and vanilla in a large bowl, using a large spoon, whisk to combine.
