In another bowl, beat the egg yolks into a fluffy mass using an electric mixer. Add the banana puree and mix the eggs.
Slowly pour half of the cream over the yolks, stirring constantly. Then return the warm cream and yolk mixture to the pan with the remaining cream, beating constantly with a whisk or electric mixer.
