I really like banana pudding… and banana desserts, really! Banana muffins, banana cake, banana pudding, banana bread, banana cookies – I love everything and can’t resist eating something banana-like at any given time. But of all the bananas, the pudding has to be my favorite!
Banana pudding is something comforting – it just hits the spot every time. And this banana pudding delivers in spades. It’s absolutely delicious, light and fluffy but also creamy and decadent with an amazing banana flavor, fresh whipped cream and lots of bananas and crunchy Nilla waffles. Just like a self-respecting ‘nana pudding needs!
Pudding consists of several parts. First, to make it rich and creamy and offset *some* of the sugar, we use some cream cheese and beat it until light and fluffy. We add sweetened condensed milk to it – that is, the nectar of the gods – and combine both. Then we add a big box of instant banana pudding mix, keep that and milk – I use less oil, but anything works too! When everything is combined, we stir in fresh whipped cream to make the mixture very fluffy. You can use melted Cool Whip, but I think banana pudding is a really simple dish that needs the flavors to shine, so I like fresh whipped cream.
This special dish is placed in a pan that heats up because you can cut it into squares as shown in the picture – very easy! Start by adding a layer of Nilla Wafers to the baking pan, followed by a layer of banana coins and then a layer of half of the pudding mixture. Repeat the layers and finish with a layer of reserved whipped cream. Cover and let cool overnight – the hardest part of this recipe is waiting! When we are ready to serve, we decorate more with Nilla Wafer crumbs. Also, if you don’t like or can’t find Nilla Wafers, you can use shortbread or Chessman cookies.
