Bananas never go bad in our home, even the softest, brown-skinned fruit always finds its way into a kind of quick bread. Yet, have you ever noticed that fast breads never cook fast? A whole loaf can take an hour to bake!

But these quick and easy banana bread muffins deserve to be called quick bread – their compact size allows you to have a bite of puree in under 30 minutes (okay, maybe 40 … you should let them cool down a bit first. to dig). The recipe is very similar to my original banana bread recipe, baked only in individual muffin tins. Oh, and despite my rants against walnuts in banana bread, I chose to include them here, albeit pecans, not walnuts (I still have strong feelings against using them in baked goods).
