I like to make banana bread even when I don’t have ripe bananas on hand. Sometimes I buy bananas and don’t let anyone eat them so they ripen and I can use them for banana bread!

Vegan Applesauce Banana Bread (sugar Free)

I love Costco’s banana bread, but it’s always too sweet for my taste, but I love how moist it is. Over the years, I have made it my mission to make my own version, but slightly sweetened or completely sweetened to my taste. I’ve been making this banana bread for decades, and it’s safe to say I’ve had plenty of time to perfect it.

Every oven is different, so don’t worry if your bread isn’t ready after 45 minutes. Have two clean toothpicks ready, test your bun by inserting a toothpick into the center of the bun. If it becomes a bit doughy, add 5-10 minutes at a time until a toothpick comes out clean.

If you prefer a dairy-free version, skip the yogurt and add applesauce instead. I’ve done this a lot because hubs go through so many stages and in the last stage he thought he was lactose intolerant so I had to make all kinds of recipes dairy free.

If you love banana bread, there are two great methods you can use, but your bananas aren’t quite ready.

If you want an extra day, put the bananas in a paper bag and fold it to seal out the outside air. This leaves them in a bag full of their own ethylene, which keeps them ripening. Adding apples, figs or pears to the pie will help it cook a little more.

Wrap the banana nut tightly in plastic wrap or store in an airtight container. It will keep on your counter for 3 days or in the fridge for about a week. I like to pop my banana bread slices in the microwave for 20-30 seconds to soften, especially if it’s been in the fridge.

Freeze banana bread. Freeze whole loaves or individual slices. This will keep in the freezer for 3-4 months!

Even if the bread or individual slices are stored in an airtight container, wrap them well in plastic wrap. Some moisture comes out of the bread, which causes it to burn in the freezer without plastic wrap. Let it dissolve completely at room temperature.

My whole wheat banana bread absolutely blew my mind. To be honest, I didn’t have high expectations. This bread is a way to get rid of 3 overripe bananas and the occasional applesauce. I make my usual banana bread with butter and all-purpose flour because that’s where all the goodness lies. Well, after one bite of this “whatever, it can’t be good” banana bread, I was proven wrong.

Plus, this whole wheat banana bread slices and freezes like a dream. I like to keep bread in the freezer when I need breakfast at home or a healthy snack. We all love it. (Especially when each slice is slathered with peanut butter!)

Did you know you can use an electric mixer to mash bananas? Mash or chop the peeled spotted bananas into large pieces and place them in the bowl of a stand mixer – or use a regular bowl and a hand mixer. As the bananas break down into bananas, start beating on low speed, then gradually increase to medium speed. You can use this bowl with other banana bread ingredients. I do the same with my banana cake!

Unsweetened applesauce replaces butter or oil. Also, I’m pretty light on added sugars – we want the banana flavor to shine through here. If you don’t want to add sophisticated sweeteners to this healthy banana bread recipe, replace the brown sugar with coconut sugar. To make this banana bread dairy-free, use non-dairy milk.
