My whole grain banana bread totally blew me away. To be honest, I didn’t have high expectations. This bread is a way to get rid of 3 excess bananas and an uneven applesauce. I make my usual banana bread with butter and whole wheat flour because that’s where all the goodness is lurking. Well, after 1 bite of this “no matter what” banana bread, I was wrong.

There are a few tricks to making the best moist banana bread. Using olive oil helps keep it moist, as does using lots of bananas—I used four—which helps sweeten the bread naturally. That means the recipe doesn’t have a lot of sugar, but it’s still decadently sweet.
