I make these banana muffins often. They combine quickly, are moist, delicious, full of flavor and stay fresh for days. They’re great for breakfast, dessert, or a sweet snack.

These muffins only take a few minutes to assemble and 25 minutes to bake. It probably takes less time and effort to bake a batch than it does to get dressed and go to a bakery and buy some. How’s that for keeping it simple?

In walnuts – roasted or not roasted. Really, it all depends on your taste and what you’re doing. Many people will insist that it’s a must for the best taste – but that’s not always the case….
I toasted the walnuts for these muffins this time. Sometimes I don’t – really, sprinkling the walnuts on top of the muffins gets nicely toasted while baking with no extra effort. More “for example” you say…? I would toast macadamia nuts on a cracker, but I wouldn’t toast nuts on a Turkish Nut Cake. Look – it’s all in your preferences.

This banana muffins recipe has been on my blog since The Year of Muffins (2018). Every year I choose one type of recipe to make each month, and in 2018 we were about to have our second newborn and I stocked the fridge with muffins and thus my website with muffin recipes.
This idea was very good, because the first time with a newborn I naively thought I would spend my maternity leave always cooking and photographing and blogging.
Instead, I wish I had actually prepared with simple meals and snacks as suggested. Thank God for a man who helped me feed myself!
Banana Bread Muffin Recipe
Make it easier. By the way, I’ve been using this recipe, which comes from my mother-in-law, who got it from Betty (Crocker, I mean), so many times I’ve been making it with my eyes closed.
In fact, it already exists on my website in the form of classic banana bread, and as my dear husband will tell you, his mother has been making this banana bread for as long as he can remember.
I just had to make a few minor tweaks to the recipe to perfect these moist banana bread muffins, and it’s one of our favorites for us and the kids.
The ingredient list is pretty basic. You need flour, baking powder, cinnamon (of course!) and salt for the dry team.
Vegan Banana Bread Muffins
The sugar team consists of brown sugar and granulated sugar. Brown sugar for super moisture and sprinkles to add some brown and slightly crunchy texture to golden muffin tops.
You also need some butter, two eggs, some ripe bananas (you can use 3 medium bananas or 2 large bananas – count on about 1 and ½ cups of mashed bananas) and then some pretty uninteresting water.
Betty asks, so I kept it. It works great (this recipe for something from the 80s has stood the test of time in April’s family), I don’t think the final product needs any additional cream (like dairy-free banana bread muffins), and hey, expensive of not counts as an ingredient.
Beat the butter and sugar, add the eggs one by one, and finally, beat the bananas and water.

Add the dry ingredients to the wet ingredients, mix until the dough comes together, then fold in the supplements you want to use.
I like to use walnuts, but you can also use chocolate chips. Check the notes section of the recipe if you want to make these adjustments.
For puffy muffins, give these moist banana muffins a quick cook at 400ºF (204ºC) and then bake the remaining time at 350ºF (177ºC). This encourages the muffins to puff up and then become puffy while the rest of the muffin bakes.
Okay, now why do I love these muffins so much – although I would never turn down a banana bread, there is something special about these little muffins. The tops get warm with the nuts and get a little crunchy with all that brown sugar stuff.
Healthy Banana Muffins With Applesauce
All the things you love about a slice of banana bread, but you get that slightly crunchy top every time, not just closer to the edges. That’s an absolute winner in my book!
These banana muffins are the perfect “2 banana muffins” for those times when you have those annoying 2 bananas lying around turning brown.
But I know dropping bananas or uncovering flipped bananas isn’t always the best time when you’re feeling sweet, so go ahead and order some flipped bananas!
We almost always froze 2 bananas together for moments like this. Just thaw in the fridge and use as normal. The future will thank you.
