Easy & Moist Chocolate Chip Banana Bread

While this banana bread may look like a humble loaf covered in chocolate chips, it’s much more than that.
I guess you could say it’s a little “extra” when peanut butter, chocolate, and bananas are combined together. This bread is full of ingredients that make a great combination, but when did it combine into a triangle shape? Well, they make the ultimate banana bread of sorts.
The resulting quick bread is rich with peanut butter and banana flavors, semi-sweet chocolate and dense but not heavy breadcrumbs.
Banana Chocolate Chip Bread For Two
This bread is a crowd pleaser on Elise’s classic banana bread with a few modifications to accommodate peanut butter.
I’m using a brand of peanut butter spread here. I don’t usually bake with natural peanut butter because it takes a little ingenuity to incorporate it. As you usually do with cream cheese, I beat the peanut butter a bit before mixing it into the mixture. I want it to be soft and smooth so that it blends easily.
You can use chinky, but I prefer cream. If you want to replace one with the other, it shouldn’t be a problem.
Since peanut butter can thicken the dough, I added some milk to the recipe to keep the bread from being too heavy.
Simple Chocolate Chip Banana Bread
Here you can use small or regular chocolate chips or chopped chocolate bars. Of course it’s your choice. If you’re using chocolate bars, be aware that they melt more easily than chips (they often contain a stabilizer to keep their shape). I avoid putting the chocolate mold on top of the dough, because it may melt and burn during baking. Just add some to the top when it comes out of the oven.
Keep this bread at room temperature, well wrapped in plastic, and on the counter for at least 2 days, although it won’t last long because you’ll eat it whole!
You can also wrap the whole loaf or slices in plastic and freeze in foil. (Double wrapping prevents freezer burn and keeps bread from picking up freezer odors.)
