Paleo Almond Flour Cranberry Bread

This Cranberry Nut Bread is perfect for this time of year! It has a hint of orange and is studded with cranberries and crunchy walnuts.

Like most quick breads, this recipe is made by mixing the dry ingredients separately from the wet ingredients and then combining the two.

The cranberries and walnuts are added last and the batter is baked in a 9×5 loaf pan.

Simply mix all the dry ingredients together in a large bowl. Mix all the wet ingredients in a separate bowl, then add the dry ingredients.

Be especially careful when using frozen and thawed cranberries. They will be quite soft and mushy, which may cause the dough to turn red.

Or if you want a red stripe on the dough, you can use a slightly heavier hand. This is great if you’re making toast for the holidays!

And if you are not a fan of walnuts, you can leave them out or use another nut.

I also like to line the bottom with parchment or spread a strip across the width of the pan and around the edges.

This also makes it easier to remove. I’ve had cases where the cranberries got stuck to the bottom and I couldn’t get the bread out.

Bread should be baked for 55-65 minutes. The time will vary slightly depending on your oven.

Start checking for doneness after about 50 minutes by inserting a toothpick into the center. The cake is ready when the toothpick comes out clean.

If you notice that the top of the bread is getting too brown before it has finished baking, you can loosen a piece of foil on top to prevent the bread from overcooking.

Let the bread cool in the pan for about 10 minutes before removing. Then place it on a wire rack to cool completely.

Cut the cake and serve immediately or cover with cling film and store in the refrigerator for up to 5 days.

I think the bread is at its best after a day or two. It’s almost as if the flavors have had time to blend.
