Banana Chocolate Chip Muffins Mini – A simple recipe for soft banana muffins stuffed with rich chocolate flakes. They are secretly healthy and have only 45 calories!

A few weeks ago, my father told me that her grandmother had not slept well for several days. She sometimes sleeps in her favorite comfortable chair instead of her bed in the evenings, but she wakes up a few hours later and she can’t click again. Her grandmother lives a 15-minute drive from her, so I decided to bring her a little surprise to cheer her up.

That evening I knocked on her door with some sweets from her favorite oven. When she saw the surprise, her eyes twinkled like a little child on Christmas morning and her hands flew straight to her mouth. “Is this for me??” she asked with a big smile and opened her lips.

She put it on her counter, hugged her and her grandmother and I returned to the living room. I leaned back on the sofa and she sat in her special chair while we talked for the next hour.

At the beginning of our serpentine conversation, Grandma asked what I was planning to bake that week. I outlined a new recipe to test out (these cookies are coming out with two other desserts soon!) and said that I want to bake my current favorite banana bread into very brown, mottled wads on the counter.

Upon hearing this, the grandmother said, “I threw away some bananas last week! It’s too overcooked to eat, but I no longer have the energy or ingredients to bake banana bread.” I smiled and told her to call her the next time it happened. I always feel like baking banana flavored sweets!

So she did, and these chocolate banana mini muffins are the result of those extra bananas! Aren’t they adorable? (I always prefer the mini treats… Maybe it’s because I’m so small!) These muffins are super soft, rich and full of melting chocolate chips… but secretly healthy and only 45 calories!

Banana Chocolate Chip Muffins (best Ever!!!)

First, use white whole wheat flour. White whole wheat flour is made by finely grinding a special type of white wheat, while regular whole wheat flour is made by grinding more types of red wheat. This gives white whole wheat flour a lighter taste and texture similar to all-purpose flour, but still has the same health benefits (with extra fiber!) as regular whole wheat flour.

Note: Whole Wheat Pastry Flour is a perfect substitute, and I’ve also included my favorite gluten-free option in the notes section.

Mashed bananas play 4 main roles in these cute muffins: taste, natural sweetness, texture and egg substitute. you’re right. There are no eggs in this recipe! (In other words, it’s safe to spill the flavor of the batter!) And bananas mashed with 1 tablespoon of coconut oil provide the most moisture and soft texture.

To add a little sweetness, stir in the stevia powder and stevia vanilla cream. Stevia is a plant-based, calorie-free sweetener that is clean, food-friendly and highly concentrated. A little goes a long way! This is my favorite stevia powder and this is my favorite stevia with vanilla cream. You can find it online as well as in many health food stores. (And you will use them in all of my recipes too!)

And of course… don’t forget the chocolate! I use mini chocolate chips because the small size is perfect for these mini muffins. And because of their smaller size, each muffin contains a lot of chocolate chips. This makes my chocoholic heart happy! It has a really strong taste and melts well, which is my favorite brand.

Before we start, here’s a quick note about liners! Low-fat muffins (and cupcakes) tend to stick to the paper liner like super-adhesive, so be sure to coat them well with a non-stick cooking spray to the liner (if used). This little trick ensures that this liner peels right off the muffins with minimal crumbs. And if you forget to spray the liner, seal the muffins in an airtight container for at least 24 hours to make them a little more comfortable.

These little muffins are perfect for a quick breakfast and snack! If stored in an airtight container in the refrigerator, it can be stored for at least a week. (And we recommend reheating the remaining chocolate in the microwave to melt the chocolate again!)

Easy Healthy Banana Chocolate Chip Muffins

Note: For gluten-free flour, we recommend 1 cup (120 g) millet flour, ½ cup (60 g) brown rice flour, ½ cup (60 g) tapioca flour, and 1½ teaspoon xanthan gum. Measured this way, most store-bought mixes will also work well.

Whole wheat flour, regular whole wheat flour and all-purpose flour can be replaced with white whole wheat flour.

If desired, stevia powder and vanilla cream stevia can be replaced with 8-12 tablespoons of pure maple syrup, honey or agave (or adjust the amount as needed and depending on the ripeness of the banana). If using this substitute, reduce the milk to 1-2 tablespoons to make up for the added liquid.

Be very careful when using the liner! Before adding the muffin batter, coat the liner well with non-stick cooking spray. This dough will stick to the liner like superglue unless coated with cooking spray.

If desired, this recipe can make 12 standard muffins. The baking temperature remains the same. It starts checking after about 15 minutes. Muffins are complete when the toothpick in the center is clean and the top is firm to the touch. Easy-to-make mini banana chocolate chip muffins with a moist and chocolate taste! These mini chocolate chip banana muffins are perfect for a quick breakfast or a delicious after-school snack! Muffins are soft, moist and sweet like chocolate. Eat warm in the oven or serve as a quick snack in a sealed container. I want to get my hands on it so that hungry children can help themselves. They are super easy to make and make everyone come back for more!

I love that the ingredients are mostly pantry staples. If you have overripe bananas on hand, you can eat muffins in seconds! Chocolate chips, flour, baking soda, butter, eggs, vanilla and sugar. So simple and delicious. A little sweet note about sugar: I made this batch of muffins with regular granulated sugar. I’ve also made them in the past with Domino Golden Sugar and guys, it’s one delicious sugar. It tastes like a cross between crystal and brown sugar, with subtle hints of molasses that makes everything incredibly delicious. As you can see here, granulated sugar works great too!

Then melt the butter in a large bowl and let it cool slightly. Beat sugar, eggs and vanilla in sequence. Then mix in the flour and baking soda. Stir until the mashed bananas combine. Gently fold the chocolate chips.

Gut Healthy Mini Banana Chocolate Chip Buckwheat Muffins

Once combined, almost fill each prepared muffin cup with dough. If desired, decorate the top of the dough with a few mini chocolate chips.

Bake the muffins for 12-15 minutes, or until golden brown and the inserted toothpicks are clean. Cool the muffins in the pan for 5 minutes, then place them on a wire rack to cool completely.
