This banana bread is everything you could ask for in a banana bread. And the only recipe you’ll ever need when you have some brown speckled bananas on the counter.
It’s filled with chocolate chips and nuts, but you can just leave it out or replace it with your favorite toppings.
It only takes a few minutes to make with just one bowl and a hand mixer (or a fork/beater too), so cleanup couldn’t be easier.
Chocolate Banana Bread Recipe
For this recipe, I use four large bananas (usually only three is enough) for more flavor and more moisture. Make sure the bananas are ripe. You know, the softer it is, the sweeter it tastes.
You can puree them with a fork, a food mill, or simply, as you can see in my video below, with a hand blender.
Cut the banana into large pieces and put them in the large bowl. Turn the blender on low and your banana will be mashed in less than a minute. Note that you don’t have to blend them perfectly into a puree. A small piece of banana is fine and adds extra moisture to the bread at the end.
For this recipe I use brown sugar instead of regular sugar, which makes the crumble smoother and adds extra flavor.
Vegan Banana Chocolate Chip Bread
And, for a richer, extra-moist texture, I use Greek yogurt combined with vegetable oil. You can substitute the same amount of cream for the yogurt and 4 ounces of butter (softened to room temperature) for the vegetable oil if you prefer.
Use very ripe, very sweet bananas with a deep flavor. If your banana isn’t ripe enough, put it in a brown bag for a day and you’re good to go!
When the bananas are very ripe, you can simply add them to the bowl with the rest of the ingredients and puree them with the hand blender.
After adding the flour to the wet ingredients, do not mix it too much. And don’t overdo it…moisture is key!
Moist Easy Walnut Banana Bread
You can finish the banana bread with half a banana cut lengthwise. Or as I did this time, a handful of pecans and chocolate chips and a sprinkle of brown sugar.
