My ex-husband is allergic to eggs, so when I started making banana bread, I had to make banana bread without eggs. Luckily – it’s super easy to replace eggs in a regular recipe and still come out with moist and delicious eggless banana bread!

First, mash the old bananas. If you have unripe bananas – you can put them in the microwave for 30 seconds and they will melt just right.

Then cream the sugar and butter and it’s not hard to do. I always try to use softened butter for this – then stir for a few minutes.
