Because my ex-husband is allergic to eggs, when I started making banana bread, I had to make banana bread without eggs. And luckily, it’s super easy to replace the egg in a regular recipe and still get moist and delicious eggless banana bread!

First, you mash up your old banana. If you have unripe bananas, you can heat them in the microwave for 30 seconds and basically blend them thoroughly.

Then I cream sugar and butter, it’s not difficult to do. I always try to use softened butter for this, then beat for a few minutes.

I am a novice baker to say the least, I don’t even have a mixer! Well I have a hand mixer that has a whisk attachment. I have been quite surprised at how well it works! And it costs less than $30! Got it as a gift after a fundraiser and thought I’d never use it but it’s amazing! Just drop the attachment and you’re good to go!

Finally, what if you need to make banana bread right now? Your best friend comes and you promised him… but you don’t have any ripe bananas.

Use whatever bananas you can get. Increase the sugar in the recipe by about 15% (usually 2-3 tablespoons) to help reduce the sweetness; and increase the salt by about 25% to help with the intensity of the taste.

Now, this does not apply to completely green bananas that you will sometimes see in the supermarket. So if that’s all you can find, just make some pumpkin bread and call it a day!
