The first step in making this coconut banana bread is to patiently wait for the bananas to ripen. Those brown-spotted bananas you really don’t want to eat are perfect for banana bread. Quick Tip: You can speed up the ripening process by storing bananas in a paper bag for a day or two.

Peel the bananas, add them to the bowl and mash them up. This is a great step for kids to help. I have used 3-4 bananas with good results. You will need 1 1/2 cups of mashed bananas.

Then add milk (soy, almond, etc.), sugar, oil, and apple cider vinegar. A note about sugar: I made this banana bread with organic unrefined cane sugar, raw turbinado sugar, and coconut sugar. While I like that the coconut sugar is probably unprocessed and low-glycemic, the cane sugar resulted in a moist, light-colored banana bread. I’ve also tried this recipe with maple syrup, and the bread was too soft. I’d like to try this recipe with other sugar substitutes like almonds, dates, or dates, but haven’t yet. The fact is that sugar is not only sweet, it also provides texture.

I tried this recipe with coconut oil and applesauce for a fat-free version. It’s still technically completely fat-free since both nuts and chocolate contain fat, but you know what I mean. The difference was not noticeable and the oil version was slightly wetter on the second day. I wrote the recipe with applesauce and no oil, but if you want to use oil or don’t have applesauce left, the ratio is 1:1.

While I usually look for a less refined flour, such as gluten-free homemade oatmeal, I stuck with natural all-purpose wheat flour and whole wheat flour. My first attempt at making this recipe with oatmeal and almonds resulted in a doughy loaf, so I’ll continue to work on a gluten-free version.

This is a simple recipe for quick bread. Mix the dry ingredients in a large bowl, including all-purpose flour, sugar, baking powder, baking soda, salt, and pumpkin spice. You want to use a mixer to stir it so there are no lumps in the batter.

In a separate small bowl, combine the wet ingredients. Whisk together (I use the same mixer as the dry ingredients) mashed banana, eggs, peanut butter, applesauce, oil and vanilla extract.

Mix the wet ingredients with the dry and stir. Gently fold in the chocolate chips, then divide the batter into two 8×4-inch pans. Then I like to top each loaf with extra chocolate chips.

I read this tip years ago somewhere when I was making quick breads in a pan. After you spray the pan, take a paper towel and run the 4 sides of the pan about ½ inch around the sides, top, and center, which will give you a nice raised loaf after the baking time.

Because of the amount of batter, it’s best to use two 8×4 inch pans. You can also use 4-5 mini pans. Small pans won’t need a long cooking time, so check them in about 25-30 minutes so they look done.

For a nice presentation, be sure to sprinkle extra chocolate chips on top of the bread dough before baking.

This recipe has only been tested and made with creamy peanut butter. I have never made this recipe with peanut butter and natural peanut butter.
