I love a good banana bread. But it’s easy to try to bake and let it get dry and runny. Not with this recipe! This super moist banana bread recipe isn’t just delicious. But it’s also good for your health!
Banana Bread Using 3 Bananas
Here’s a little trick to making the juiciest banana bread. Using olive oil helps keep bread moist. As with many bananas, I use 4 bananas, which naturally sweeten the bread. This means that there is not a lot of sugar in the recipe. But it’s still sweet and decadent.

I like to use olive oil for baking. Unless you live under a rock you know that olive oil is one of the healthiest fats. And baking with olive oil is great with Mediterranean cuisine. but health benefits I like it better than butter in many cases.
Using oil in baking will do things. It is more moisturizing than using butter. And best of all, it stays hydrated for days. while buttered baked goods tend to dry out faster.
I like that you don’t have to soften it or melt it from the solid state. Just pour the olive oil into the bowl. You are all set!

And because the banana bread is poured into greased bread, it makes it easier to remove the banana bread. Just flip the pan over.
That said, butter is delicious. You can use it or another oil like coconut or canola in this recipe. And I recommend the hot final product covered in salted butter.
When I’m ready to bake I’ll put it in the microwave, cut the tops off, and slide the bananas out of the peel!
Full disclosure: It looked absolutely hideous when it came out. It’s soft and quite shocking. But I swear this trick is a life changer when it comes to baking bananas!

Enter: glass bakeware. I like it just as much as I like using white ceramic bakeware. It’s not too hot and overloads some things you do. I have these and they serve me well!

Cooking times will vary depending on some factors, such as your height, how big the bananas are. how big is the egg How hot is the oven, etc.
You should check the ripeness of the bread by inserting a toothpick. (or cookie cutter) in the center of the bread and pull it out. If it comes out clean – the bread is done! If raw dough sticks, it needs more time.
You can keep this olive oil banana bread at room temperature for a few days. And the bread will remain juicy and delicious. Just make sure you store it in an airtight container. You can also refrigerate it longer and freeze it for a few months.
I usually cut it and save it. So I can have one in the morning for breakfast without worrying about pulling out the cutting board. I like to put it in the microwave, but if I have time, the warm banana bread is great.
