Because this is the best banana bread recipe, period. You can mix everything in a bowl, you can change the amount of sugar or banana. And the secret of its great taste? Melted butter.

The beauty of this banana bread recipe is that you don’t need a fancy mixer! All you need is a mixing bowl, a fork to beat the eggs, and a sturdy spoon to mix the batter. The amount of sugar is flexible. The original recipe calls for a cup of white sugar, but most people, including me, are fine with 3/4 cup and many are happy with 1/2 cup.

If you like, you can sprinkle on a cup of chopped pecans, raisins, or chocolate chips, or spoon the batter into a muffin tin and make banana pecan muffins instead. You can even go a step further and make chocolate banana bread.

This recipe calls for an 8 x 4-inch loaf pan, which makes a tall loaf. The recipe also works in an 8 1/2 x 4 1/2-inch loaf pan, which makes a slightly smaller loaf. Because the pan is larger, the cooking time is shorter: 47 to 57 minutes. A 9 x 5-inch pan will make a shorter but more flavorful loaf; cook for 45 to 55 minutes.

You don’t need a mixer for this recipe! Cleaning is also easy. If you want, you can mix everything in a bowl.

But, over the years, I’ve found that frozen overripe bananas are a great type of banana bread that I can’t stop eating.

Because when they are diluted, bananas become super soft and runny. And all juices are gold! Do not discard the liquid, it makes the bread moist and tasty.

When you get a nice, ripe banana with lots of black spots all over it, put it in the freezer. (And yes, black bananas are perfectly fine to use!)

Use a large bowl to make the dough. I used a 4qt bowl (the largest bowl in this set).

How To Make Banana Bread: The Simplest, Easiest Recipe

When the dough is ready, spray a 9×5 baking pan with nonstick cooking spray and line with parchment paper. The parchment paper is completely optional, but it makes it easier to remove the bread from the pan.

Then, transfer the dough to the prepared pan and put it in the oven for about an hour or until a toothpick inserted in the middle comes out clean. I like to let my bread cool in the pan once it’s done for about 20 minutes, then remove it from the pan to cool completely on a wire rack.

The best type of banana for this recipe is extra ripe with lots of specks. If your bananas are still green or yellow, I suggest you wait a bit longer.
