Banana bread is usually very sweet, but I wanted to make one because I’ve been getting a lot of low sugar recipe requests lately. This banana flavored bread isn’t too sweet per se. If you prefer a sweeter banana bread, you can easily make it by adding a little maple syrup to the batter (about 3 tablespoons) or by adding chocolate chips to the batter.

Since there is no flour in this bread, it is denser than quick bread. It is also very humid. Ground seeds give the bread a slightly crunchy taste.

I call this oat-free bread the perfect banana bread for breakfast. The goats give it a hearty texture that I think is perfect for breakfast. All ovens bake differently, so start checking the bread after about 45 minutes. You’ll know it’s done when a toothpick inserted in the center comes out clean. The head is also very strong and not at all.

Honey Oat Quick Bread Recipe

Preheat oven to 350ºF. Grease a 9×5 inch loaf pan. You can also line a baking sheet with parchment paper and then spray it with nonstick cooking spray.

In a large bowl, mix brown sugar, vegetable oil, milk and eggs. Mix until combined. Stir in the banana.

In another bowl, mix flour, baking powder, baking soda, salt, cinnamon and nutmeg. Add the dry ingredients to the wet ingredients all at once and mix until combined.

Pour the dough into the prepared bread pan. Transfer to the oven and bake until a tester inserted in the center comes out clean, about 60 minutes. You may need to cover the top with foil about halfway through the baking time to avoid this.

Leave the loaf to cool for 10 minutes before removing it from the mold. Allow to cool completely before cutting.

Oatmeal Banana Bread (made With Greek Yogurt)

In a high-speed blender or food processor, add all of your ingredients and blend until you have a smooth and fluffy dough. If your dough is too thick, you can add a little almond or oat milk to loosen it. Then fold in the chocolate chips, if using.

Now transfer to a greased loaf pan and bake for 35-40 minutes or until the topping comes out mostly clean. Let the bread cool completely in the pan before slicing.
