I like to use olive oil for baking. Unless you’ve been living under a rock, you know that olive oil is one of the healthiest fats, and baking with olive oil goes well with Mediterranean dishes. But aside from the health benefits, I like it better than butter in many situations.
Using oil for frying keeps things moister than using butter. Best of all, it stays moist for days afterward, while baked goods with butter tend to dry out faster.
I also like that you don’t have to soften it or melt it from the solid state – just pour olive oil into the bowl and you’re good to go!

The best part is that when it freezes like this, it gets very pulpy, so you don’t have to worry about mashing the banana separately. Just pour it straight into the bowl and mix!
I recommend using a glass loaf pan for making banana bread. I’ve used metal before and almost every time the sides of the bread come out dry and burnt.
This is because the darker the pan, the hotter it gets in the oven. And if it’s too hot, it will cook the edges of the banana bread before it’s fully cooked.
Enter: glass bakeware. I like it just as much when I use white ceramic baking dishes – they don’t get too hot and will overcook parts of whatever you’re making. I have these and they have served me well!
Healthy Banana Bread
Cooking times depend on a number of factors: height, how big are the bananas, how big are the eggs, how hot your oven is, etc.
You should make sure to check for doneness by inserting a toothpick (or cake tester) into the center of the loaf and taking it out. If it comes out clean, the bread is done! If the raw dough sticks, it needs more time.
You can keep this olive oil banana bread at room temperature for a few days and it will stay super moist and delicious. Just make sure to keep it in an airtight container. You can also keep it in the fridge for a long time and also freeze it for a few months.
I usually cut it up and save it so I can eat a slice for breakfast in the morning without having to worry about pulling out the cutting board. I like to put it in the microwave when I have time, because warm banana bread tastes great.
