The beauty of this banana bread recipe is that you don’t need a fancy blender! All you need is a mixing bowl, a fork to beat the eggs and a sturdy spoon for mixing the dough. The amount of sugar is variable. The original recipe called for a cup of white sugar, but 3/4 cup is enough for most people, including me, and many are happy with 1/2 cup.
You can throw in a cup of chopped nuts, raisins, or chocolate chips if you like, or put the batter in muffin tins and make banana muffins. You can even go ahead and make chocolate banana bread.

This recipe calls for an 8-by-4-inch loaf pan that will make a long loaf. The recipe will also work in an 8 1/2- by 4 1/2-inch loaf pan, which makes a slightly shorter loaf. Because the pan is slightly larger, the baking time is shorter: 47 to 57 minutes. A 9-by-5-inch pan will make a very short but still delicious loaf; bake for 45 to 55 minutes.
You don’t need a blender for this recipe! Cleaning is also easy. If you like, you can mix everything in one bowl.

When the dough is ready, spray a 9×5 loaf pan with nonstick cooking spray and line with parchment paper. The parchment paper is completely optional, but it will make removing the bread from the pan much easier.
